7 cups sweet potatoes, scrubbed, cut in 1-inch cubes
1 tablespoon olive oil
3/4 teaspoon salt
1/2 teaspoon black pepper
4 cups coarsely chopped onions
1 tablespoon butter, melted

Steps:

  • Preheat oven to 325 degrees.
  • Place the sweet potatoes in a shallow roasting pan that has been sprayed with cooking spray.
  • Drizzle with the oil, sprinkle with salt and pepper; toss well to coat.
  • Place in preheated oven and bake for 30 minutes.
  • Add the onions; stirring well.
  • Bake an additional 30 minutes; remove from oven.
  • Preheat broiler.
  • Drizzle the sweet potato mixture with melted butter; stirring to coat.

2 teaspoons vegetable oil, or as needed
6 tablespoons brown sugar

4 sweet potatoes (about 1.2kg), peeled
2 tbsp olive oil
sliced red onions, unpeeled garlic cloves, thyme sprigs or other veg or herbs of your choice (optional)

  • Heat the oven to 230C/210C fan/gas 8. Chop the sweet potatoes into 2-3cm cubes.
