One 3-bone beef rib roast (about 5 to 6 pounds), removed from the bones and tied back on (have your butcher do this for you)
1 tablespoon kosher salt, plus more as needed
2 teaspoons ground black pepper
1 teaspoon dried thyme
1 teaspoon granulated garlic
1 tablespoon porcini mushroom powder
1 onion, thinly sliced
4 sprigs rosemary, coarsely chopped
1 head garlic, cut in half
1 tablespoon vegetable oil
2 cups low-sodium beef stock or chicken stock
1 tablespoon cornstarch
1/4 cup cool water
1 tablespoon unsalted butter

Steps:

  • Combine the salt, pepper, thyme, granulated garlic and mushroom powder in a small bowl. Mix well.
  • Season the beef on all sides with the salt mixture. Wrap the beef in butcher paper and place in the refrigerator 12 hours, or up to 36 hours.
  • Preheat the oven to 250 degrees F.
  • Remove the roast from the refrigerator and pat dry with paper towels. Season the beef with the remaining salt mixture.
  • Scatter the onions, rosemary and garlic in the center of the roasting pan and drizzle with oil. Put the meat bone-side down on top of the vegetables and place in the oven. Cook until the meat reaches an internal temperature of 110 to 115 degrees F, 3 to 3 1/2 hours (use an instant-read thermometer!!). Remove the meat to a rack and loosely cover with aluminum foil.
  • Turn the oven to 500 degrees F. While the oven heats, place the roasting pan on the stovetop over medium heat. Drain any excess fat from the pan, if necessary. Add the beef stock to the pan and bring to a boil, scraping up any browned bits. Reduce the heat to a simmer and cook for 5 minutes. Strain into a smaller saucepan and bring to a simmer.
  • Combine the cornstarch and water and mix until smooth. Whisk the cornstarch mixture into the beef stock and return to a simmer. Whisk the butter into the sauce.
  • Return the beef to the oven on a rack set over a roasting pan. Roast until well browned on all sides, about 10 to 12 minutes. Remove the meat from the oven and rest 10 minutes before slicing. To slice, remove the strings. Remove the meat from the rack of bones. Put the bones on the rack (with the rawer side up) in the roasting pan and cook until crispy on top, 4 to 5 minutes (watch carefully). Slice the meat into 1/2-inch slices. Pour the gravy into a serving vessel. Serve with the bones, if desired.

2 teaspoons water
2 tablespoons minced garlic
2 cups sliced fresh mushrooms
2 (1 inch) thick slices cooked leftover prime rib, cut into 1-inch cubes
1 ½ cups leftover mashed potatoes, or more to taste

Steps:

  • Preheat the oven to 450. season the meat with the montreal steak seasoning and make a few slits in the meat and shove garlic into it. Put in the roast and bake for 45 minutes. Then turn off the oven and leave roasting for 2 hours without opening the door. This gives the meat a nice crust and leaves the meat juicy and pink inside. If you use a meat thermometer because you don't trust to just wait and possibly over cook the meat, make sure you take it out a few degrees before the temp gets where you want it because it will continue to rise while sitting. While the meat is cooking, make your gravy. Start by sauteing the onions and mushrooms with salt and pepper until golden, add some chopped garlic and the veal stock along with 1/4 cup of red wine. Reduce for about 5 minutes. If you want the sauce thicker you can add some corn starch to some cold stock, shake well and add to the mushroom gravy to thicken. You need to bring it to a boil so that it will get nice and thick.

One 6- to 7-pound bone-in prime rib (to make slicing easy, ask your butcher to cut the bones from the meat, then tie them back onto the roast)
3 cloves garlic, sliced
1/4 cup kosher salt
2 tablespoons coarsely ground black pepper
1/4 cup all-purpose flour
3 cups low-sodium beef stock
1 tablespoon Dijon mustard
A few sprigs fresh thyme
A few sprigs fresh rosemary
1 clove garlic, smashed
1 tablespoon sherry vinegar or red wine vinegar

Steps:

  • For the prime rib: Use the tip of a knife to make slits in the fat of the prime rib and stuff with slices of garlic. In a small bowl, mix the salt and pepper. Create a crust of salt and pepper all over the meat. Let stand at room temperature for 30 minutes.

a 2-rib tied prime beef rib roast (from small end; about 4 1/2 pound trimmed)
2 teaspoons kosher salt
For vegetables
3 ounces pearl onions (about 16)
3 carrots
3 celery ribs
2 Portobello mushrooms
2 1/2 tablespoons vegetable oil
1 1/2 cups Merlot or other dry red wine
1 cup veal or beef demiglace*
2 tablespoons red-currant jelly
3/4 teaspoon drained bottled horseradish
3 tablespoon chopped fresh flat-leafed parsley leaves
Accompaniment: 4Yorkshire puddings

Steps:

  • Preheat oven to 450°F.
  • Put beef, fat side up, in a shallow flameproof roasting pan. Sprinkle salt over top and season with pepper. Roast beef in lower third of oven 20 minutes. Reduce oven temperature to 350°F. and roast beef 1 hour and 15 minutes more, or until a meat thermometer inserted 2 inches into center of meat registers 115°F.   • Trim onions. Diagonally cut carrots and celery into think slices. Remove stems from mushrooms and cut each cap into 8 wedges. In a large skillet cook onions in 1 1/2 tablespoon oil over moderately low heat, stirring occasionally, until softened and golden, about 8 minutes. With a slotted spoon transfer onions to a bowl and cook carrots and celery in remaining tablespoon oil over moderate heat, stirring, until carrots are crisp-tender. Add mushrooms and cook, stirring, until liquid mushrooms give off is evaporated. Transfer vegetables to bowl and season with salt and pepper.
  • While beef is standing, skim fat from pan juices and reserve 4 tablespoons fat for Yorkshire puddings. (Puddings may be baked while beef is standing.) On top of stove add wine to roasting pan and simmer over moderately high heat, scrapping up brown bits, until reduced to about 1/2 cup. Add demiglace, jelly, horseradish, vegetables, parsley, and salt and pepper to taste and simmer, stirring occasionally, until heated through.
  • Discard string and with a sharp knife remove rib bones.
  • Thinly slice beef and serve over Yorkshire puddings with gravy.

2 small onions (1 left unpeeled and halved lengthwise, and 1 peeled and chopped)
3/4 stick (6 tablespoons) unsalted butter
2/3 cup chopped shallots (about 3 large)
1 carrot, finely chopped
1 celery rib, finely chopped
2 garlic cloves, smashed
1 tablespoon tomato paste
2 sprigs fresh flat-leaf parsley
1 sprig fresh thyme
1 Turkish or 1/2 California bay leaf
4 black peppercorns
1 (750-ml) bottle dry red wine such as a good-quality Côtes du Rhône
1/2 oz dried porcini mushrooms
2 cups boiling-hot water
2/3 cup veal demi-glace
1/2 teaspoon salt

  • Cook roast:
  • Let roast stand at room temperature 1 hour.
  • Put oven rack in middle position and preheat oven to 450°F. Trim all but a thin layer of fat from roast, then rub roast all over with porcini powder, salt, and pepper. Add tomato paste, herbs, bay leaf, peppercorns, and 2 cups wine and boil, uncovered, over moderately high heat until liquid is reduced to about 1/4 cup, 25 to 30 minutes. Pour through a fine-mesh sieve set into another 2-quart heavy saucepan, pressing on and then discarding solids.
  • While wine reduces, soak porcini in boiling-hot water (2 cups) in a bowl until softened, about 20 minutes. Drain porcini in a paper-towel-lined sieve set over a bowl and reserve soaking liquid. Rinse porcini and pat dry, then finely chop. Set aside.
