THE BEST GREEN BEANS EVER

The Best Green Beans Ever image

Ree Drummond's Best Green Beans Ever recipe, from The Pioneer Woman on Food Network, starts with bacon grease and gains even more flavor from chicken stock.

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 40m

Yield 6 servings

Number Of Ingredients 8

1 pound green beans
2 tablespoons bacon grease (can substitute 2 tablespoons butter)
2 cloves garlic, minced
1 large onion, chopped
1 cup chicken broth, plus more if needed
1/2 cup chopped red bell pepper
1/2 to 1 teaspoon kosher salt (can substitute regular table salt, use 1/4 to 1/2 teaspoon)
Ground black pepper

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.

Time 40m

Yield 4 cups, 4-6 serving(s)

Number Of Ingredients 4

2 (14 1/2 ounce) cans cut green beans (not french-style)
4 slices thick-cut bacon
1/4 teaspoon minced garlic
salt

Steps:

  • Cook the bacon in a heavy sauce pan (do not crisp the bacon, just cook enough to extract the drippings). Remove from heat.
  • Empty the 2 cans of cut green beans into the sauce pan directly on top of the cooked bacon and drippings.
  • Add salt to taste and then the 1/4 teaspoons of minced garlic. Stir well and return to heat.
  • Bring to a boil over medium heat, then reduce heat to med-low, cover, and simmer for at least 30 minutes (1 hour is better).
  • Serve and enjoy.
  • NOTE - Use good quality canned green beans. My family prefers "flat beans" (Cut Italian Green Beans), but regular cut will taste just as good.

Tips:

  • Fresh is best: When selecting green beans, choose ones that are vibrant green in color and crisp to the touch. Avoid beans that are wilted, bruised, or have yellow or brown spots.
  • Trim the beans: Before cooking, trim the ends of the green beans. This will remove any tough or woody ends and help the beans cook evenly.
  • Blanch the beans (optional): Blanching green beans is a quick process that helps to preserve their color and nutrients. To blanch the beans, bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are bright green and tender-crisp. Immediately transfer the beans to a bowl of ice water to stop the cooking process.
  • Season to taste: Green beans are a versatile vegetable that can be seasoned in a variety of ways. Some popular seasonings include salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper. You can also add fresh herbs, such as parsley, basil, or thyme.
  • Cook the beans until tender-crisp: Green beans should be cooked until they are tender-crisp, but not mushy. The cooking time will vary depending on the method you are using. Sautéing or stir-frying green beans will take a few minutes, while boiling or steaming them will take longer.

Conclusion:

Green beans are a delicious and healthy vegetable that can be enjoyed in a variety of ways. By following these tips, you can cook green beans that are flavorful, nutritious, and perfectly cooked. So next time you're looking for a quick and easy side dish, give green beans a try!
