SIMPLE STEAK SAUCE

Simple Steak Sauce image

A good Pan-Fried Steak can stand on its own, but sometimes a sauce gives it that extra oomph. To make this quick and easy pan sauce, you need just two ingredients: a liquid and a thickener, such as red wine and butter. From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books).

Categories     Food & Cooking

Time 5m

Yield Makes enough for 2 steaks

Number Of Ingredients 2

1/3 cup dry red wine or other liquid (such as white wine, Cognac, Armagnac, whiskey, vermouth, or vinegar)
2 tablespoons unsalted butter or other thickener (such as heavy cream, creamy cheese, or mustard)

Steps:

  • Once steaks are removed from skillet, return skillet to high heat. Add wine and simmer, scraping up browned bits from bottom of skillet, until reduced slightly.
  • Swirl in butter and simmer 1 minute more. To serve, drizzle over steaks.

Tips:

  • Choose a high-quality steak. The type of steak you use will greatly affect the flavor of your steak sauce. Look for a steak that is at least 1 inch thick and has good marbling.
  • Use fresh ingredients. The fresher the ingredients you use, the better your steak sauce will be. If possible, use organic ingredients.
  • Don't be afraid to experiment. There are many different ways to make steak sauce. Feel free to experiment with different ingredients and flavors until you find a combination that you like.
  • Don't overcook your steak. Overcooked steak is tough and chewy. Cook your steak to medium-rare or medium for the best flavor.
  • Let your steak sauce rest. After you make your steak sauce, let it rest for at least 30 minutes before using it. This will allow the flavors to meld together.

Conclusion:

Making your steak sauce at home is a great way to add flavor and excitement to your meals. With just a few simple ingredients, you can create a delicious steak sauce that is sure to impress your family and friends. So next time you're looking for a way to spice up your steak, try making your steak sauce. You won't be disappointed.
