MOM'S FAVORITE: BETTY CROCKER'S CLASSIC FLUFFY MEATLOAF
My mom has been using this recipe since she was married in the 50's and it's as good now as then. She still makes it for me when I visit. :) It's wonderful when first served, but is even better chilled... cold meatloaf sandwiches, mmm! A versatile recipe, you can easily alter it to your own tastes. Experiment and enjoy! :)

Steps:
- Mix ingredients thoroughly.
- Pack into greased 9x5x3" loaf pan.
- Bake in 350 degree oven for 1 1/2 hours.
- Serve hot or let cool and chill and serve cold.
- Other suggestions: add 3 cloves minced garlic; spread bacon slices over the top before cooking and/or 3 Tbsp catsup or barbecue sauce; substitute 1 Tbsp horseradish and 1 Tbsp for the mustard and sage; substitute 1 cup sauerkraut for 1 cup breadcrumbs and add 1/2 tsp dill weed to taste; try it with other herbs/spices or combinations added such as curry powder, cayenne and cumin, or oregano and basil.
Tips:
- Choose the right ground beef: For a moist and flavorful meatloaf, use a combination of ground chuck and ground sirloin.
- Don't overmix the meatloaf mixture: Overmixing can make the meatloaf tough.
- Use bread crumbs or crackers to help bind the meatloaf mixture: This will help keep the meatloaf moist and prevent it from falling apart.
- Add some vegetables to the meatloaf mixture: This will add flavor and nutrients to the meatloaf.
- Use a loaf pan that is the right size for the meatloaf mixture: A loaf pan that is too small will cause the meatloaf to overflow, and a loaf pan that is too large will cause the meatloaf to be too thin.
- Bake the meatloaf in a preheated oven: This will help the meatloaf cook evenly.
- Let the meatloaf rest before slicing: This will help the meatloaf stay moist and prevent it from falling apart.
Conclusion:
Meatloaf is a classic comfort food that is easy to make and can be tailored to your own taste. With a few simple tips, you can make a delicious and moist meatloaf that your family and friends will love.
