Kapusta is a great side dish at any meal and even makes a great main dish for vegetarians. This recipe was passed down by my Polish grandmother. I grew up with it at every holiday meal and just love it. Sauerkraut takes on a whole new flavor when baked and is really delicious! Try it and see for yourself!

6 tablespoons butter, divided
2 onions, chopped
1 large portobello mushrooms, sliced
1 ½ cups sliced mushrooms
¼ medium head cabbage, thinly sliced
1 (32 ounce) jar sauerkraut, drained and pressed
½ teaspoon white sugar
½ teaspoon dried thyme
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat 4 tablespoons of butter over medium heat; saute onions and mushrooms until tender.
  • In a medium saucepan over high heat, boil cabbage for 10 minutes.
  • In a 9 x 13 inch baking dish combine onions, mushrooms, cabbage, sauerkraut, sugar, thyme, salt and pepper; mix well. Dot remaining 2 tablespoons butter on top. Cover.
  • Bake in preheated oven for 1 hour, stirring every 20 minutes.

2 cups beef broth or 2 cups chicken broth
2 lbs savoy cabbage or 2 lbs green cabbage, shredded
1 large carrot, shredded
2 tablespoons butter
1 onion, chopped
1 1/2 teaspoons flour
2 tablespoons lemon juice or 2 tablespoons vinegar
1 teaspoon salt
1/8 teaspoon fresh ground black pepper
1 teaspoon sugar

Steps:

  • In a large saucepan, combine the broth, cabbage and carrot.
  • Cover and simmer for 30 minutes.
  • Meanwhile, melt 1 tablespoon of the butter in a small skillet and saute the onion over a medium heat until tender.
  • Stir the onion into the cabbage mixture and simmer for another 15 minutes, stirring frequently.
  • Once the onion has been added in, melt the remaining butter in the empty skillet and add the flour, stirring over a medium heat until the flour goes golden brown.
  • Take 1/2 cup of the broth out of the pot with the cabbage and stir it in with the flour mixture, then return the flour/broth to the pot with the cabbage.
  • Stir the lemon juice or vinegar into the cabbage.
  • Season with salt, pepper and sugar.
  • Serve hot.

1 white cabbage cut into thin slices (a bit larger than for coleslaw)
1 big yellow onion finely chopped
2 - 3 bacon strips chopped into tiny pieces
2 tablespoons of white all purpose flour
3 cups of vegetable broth
Bay leaf
Allspice seeds
Cumin
Salt, pepper, sugar

Steps:

  • Place cabbage in the pot with bay leaf and allspice seeds, pour vegetable broth and boil. Meanwhile fry the bacon in the skillet until golden brown and fairly crunchy. Take out the bacon from the skillet and put to the cabbage but leave the bacon fat in the skillet. Now fry the onion on the remaining fat, add a bit of sugar and salt for taste. When onion is soft mix thoroughly 2 tbs of flour with cold water and add to the onion. Stir carefully and add some hot water from the cabbage. Continue adding and stirring until the mixture is fairly smooth then add everything back to the cabbage. Add salt, pepper, cumin and continue cooking until cabbage is soft.

1/4 cup unsalted butter
2 large granny smith apples, cored and chopped
1 large onion, thinly sliced
2 lbs red cabbage, shredded
1/4 cup packed golden brown sugar
2 tablespoons cider vinegar
1 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon allspice
1/8 teaspoon ground cloves
1/3 cup chicken stock
2 tablespoons black currant jam
salt and pepper

Steps:

  • Melt the butter in a large saucepan over medium-high heat. Add the apples and the onion and sauté until the onion is tender and translucent, approximately 8 minutes.
  • Stir in cabbage and stir until wilted, approximately 8 minutes. Stir in the sugar, vinegar ,salt, cinnamon, allspice, and cloves. Cover and cook until the cabbage is tender, stirring occasionally, aproximately 10 minutes.
  • Add the stock and jam and continue to cook uncovered for 5 minutes longer. Season with salt and pepper and serve. Delicious!
