1/3 c. dried cranberries
1 chopped shallot
1/4 c. red wine vinegar
3 tbsp. orange juice
1/3 c. olive oil
2 tsp. Dijon mustard
Kosher salt

For the Salad
8 c. torn bibb lettuce
2 c. sliced radicchio
2 oranges, peel and pith removed and flesh sliced
2 red grapefruits, peel and pith removed and flesh sliced
2 large celery ribs, sliced
Kosher salt
black pepper
4 oz. goat cheese, crumbled

Steps:

  • Make the Cranberry-Dijon Vinaigrette: Place dried cranberries, shallot, red wine vinegar, and orange juice in a food processor; let stand 10 minutes. Add olive oil and Dijon mustard. Pulse to finely chop, 4 to 5 times. Season with salt and pepper.

1/2 cup coarsely chopped almonds
1/4 cup white sesame seeds
1 teaspoon ground coriander
1 teaspoon sugar
Kosher salt and freshly ground pepper
1 tablespoon whisked egg white (from 1 large egg)
3 ruby-red grapefruits
2 teaspoons Dijon mustard
3 tablespoons white-wine vinegar
1/8 teaspoon ground coriander
2 tablespoons almond oil
4 tablespoons neutral oil, such as safflower or grapeseed
Kosher salt and freshly ground pepper
3 heads Bibb or Boston lettuce, outside leaves discarded, inner leaves washed well and dried
3 avocados, peeled, pitted, and cut into 1/4-inch slices
1/2 cup lightly packed fresh herbs, such as parsley or mint, or a combination

Steps:

  • Sesame Crunch:Preheat oven to 350 degrees. Combine almonds, sesame seeds, coriander, sugar, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a bowl. Add egg white and stir to combine. Spread mixture into a single layer on a rimmed baking sheet.
  • Roast, stirring once, until golden and crunchy, about 12 minutes. If sticking to pan, scrape up with a spatula, then let cool completely. Crunch can be stored in an airtight container at room temperature up to 1 week. (Makes 3/4 cup.)
  • Salad:Remove peel and white pith from grapefruits. Slice 2 into 1/4-inch-thick rounds. Hold remaining grapefruit over a bowl and cut between membranes, allowing segments to fall into bowl. Squeeze juice into bowl.
  • Whisk together mustard, vinegar, 2 teaspoons juice, and coriander. Gradually whisk in both oils until thick and emulsified. Season with salt and pepper.

1/2 cup extra-virgin olive oil
3 tablespoons orange juice

Pinch garlic powder

One 14-ounce bag multicolor coleslaw mix with carrots
1 cup shredded kale
1/2 cup sliced almonds
1/2 cup crispy onions (or you can substitute raw onions)
3 clementines, peeled and separated

  • For the vinaigrette: Combine the apple cider vinegar and mustard in a small bowl, then slowly whisk in the olive oil (this step is called emulsifying). Make sure it's fully incorporated. Whisk in the orange juice, honey, garlic powder, salt and pepper, then set aside or refrigerate.

This salad is great. Light, crunchy and pleasantly nutty. After graduating from college this past May and being home looking for a job I got sick of eating the same things everyday so I threw this together for something lighter. I've included what I use below, but this salad lends itself to be pretty flexible. Would be great with sliced grilled chicken on top or shrimp might be good too, with a little squeeze of lime. One warning: this makes quite a lot of salad so unless you are feeding a crowd I wouldn't put the dressing on all of the salad at once... it won't keep (soggy lettuce, soggy crunchies, etc). A good solution would be to bag up single serving portions in ziplock baggies and then top with dressing and crunchies when ready to serve. You could even put them straight into the bag and shake to mix it up before putting on a plate.
