Rhode Island-Style Pizza Strips aka Bakery Pizza image

This recipe is inspired by the bakery pizza I used to have as a kid that can only be had in Rhode Island's Italian bakeries and markets. Don't let the lack of toppings stop you from trying this delicious recipe. Great for a party and kids love it!

2 pounds prepared pizza dough
1 (28 ounce) can crushed tomatoes
½ cup minced pepperoni
¼ cup olive oil
3 tablespoons grated Romano cheese
3 tablespoons white sugar
1 teaspoon salt
¾ teaspoon minced garlic
¾ teaspoon dried oregano
½ teaspoon freshly ground black pepper
¼ cup olive oil, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 2 baking sheets or line with parchment paper.
  • Divide dough in half and roll or press each half out onto each prepared baking sheet into rectangles.
  • Mix crushed tomatoes, pepperoni, 1/4 cup olive oil, Romano cheese, sugar, salt, garlic, oregano, and black pepper in a bowl, stirring to dissolve sugar and salt. Spread half the sauce evenly over each crust, spreading it all the way to the edges. Drizzle top of each pizza with 2 tablespoons olive oil.
  • Bake in the preheated oven until the sauce looks dry at the edges, still moist in the middle, and crusts are crisp on the bottom, 15 to 20 minutes.
  • Let cool to room temperature on racks and cut each pizza into 8 strips about 9 inches long and 3 inches wide.

One 14-inch pizza dough (store-bought or homemade), stretched and ready for toppings
6 ounces pizza sauce
6 ounces mozzarella, shredded
3 ounces black olives
2 1/2 ounces sliced mushrooms
2 ounces bell peppers, sliced
2 ounces red onion, sliced
5 ounces chopped cooked chicken
3 ounces pepperoni
1 tablespoon olive oil
1/4 ounce minced garlic
1 1/2 ounces black olives
1 1/4 ounces sliced mushrooms
1 ounce red onion, chopped
1 ounce bell peppers, chopped
7 ounces einkorn penne, cooked
3 ounces pizza sauce
2 ounces blue cheese crumbles

Steps:

  • For the pizza: Preheat the oven to 450 degrees F.
  • Place the dough on a pizza pan. Spread the sauce on the dough. Top with mozzarella, black olives, mushrooms, bell peppers and onions. Add chicken and pepperoni. Bake for 7 minutes.
  • For the pasta topping: Meanwhile, drizzle olive oil in a heated saute pan. Add garlic and cook until fragrant. Add olives, mushrooms, onion and bell peppers. Saute until tender. Add cooked pasta and pizza sauce. Saute until heated through.
  • Remove pizza from oven and top with pasta and blue cheese crumbles. Take off pan and put directly on an oven rack. Bake until desired crispness, another 3 to 5 minutes. Place pizza on a cutting board and slice into 8 pieces.

1 cup warm water, 105 to 115 degrees F
1 (.25 ounce) package yeast
1 tablespoon sugar
3 ¼ cups flour, divided
¼ cup olive oil, divided
2 tablespoons cornmeal
½ cup GARLAND JACK'S SECRET SIX Barbecue Sauce Original Recipe
¾ cup pulled cooked pork
¼ cup slivered red onions
¼ cup fresh pineapple chunks
1 (8 ounce) package KRAFT Shredded Mozzarella Cheese with a TOUCH OF PHILADELPHIA
2 tablespoons fresh cilantro leaves

Steps:

  • Add warm water to combined yeast and sugar in large bowl; stir. Let stand 5 min. Stir in 3 cups flour and 3 Tbsp. oil until mixture is well blended and mixture forms soft dough.
