D's Famous Salsa image

This is a Texas recipe I've developed and refined over many years. It's very fast, easy, and I usually have everything on hand. I often give it as gifts to my family back East.

2 (14.5 ounce) cans stewed tomatoes
½ onion, finely diced
1 teaspoon minced garlic
½ lime, juiced
1 teaspoon salt
¼ cup canned sliced green chiles, or to taste
3 tablespoons chopped fresh cilantro

Steps:

  • Place the tomatoes, onion, garlic, lime juice, salt, green chiles, and cilantro in a blender or food processor. Blend on low to desired consistency.

This was an aunts recipe with a little revising. This one can please, tease or hurt you, depending on how many Serrnos you want to use. Hope you like.

2 medium tomatoes, chopped
1/2 medium yellow onion, chopped
1 clove garlic, peeled
1 (15 ounce) can whole tomatoes, undrained
3 tablespoons vinegar
3 jalapeno peppers, stem removed
2 serrano peppers, stem removed (2 will be hot adjust for spiciness)
1/2 cup fresh cilantro
salt

Steps:

  • Place all ingredients in a blender, blend well and serve.
  • Really good on tacos or with chips, and very easy to make.

BIG J'S CARNE ASADA

Using orange juice instead of the traditional lemon juice gives this a sweeter taste, this is a party size recipe. Hope you enjoy.

10 lbs skirt steaks, sliced thin
1 medium yellow onion, peeled,sliced in thin rings
1 medium purple onion, peeled,sliced in thin rings
1 medium green bell pepper, coarsely chopped
1 bunch fresh cilantro, stems removed
2 -3 cloves garlic, peeled and crushed
1 quart orange juice
salt and pepper

Steps:

  • In a large plastic or other non-reactive bowl, place a layer of meat.
  • In a small bowl mix together onions,bell pepper, cilanto and garlic.
  • Spread handful of onion mixture over layer of meat, pour enough orange juice to cover, add salt and pepper.
  • Repeat layers until finished, pour any remaining orange juice over mixture.
  • Marinate for at least 4 hours or overnight, halfway through turn meat over.
  • Grill over charcoal, time will depend on thickness and heat, usually not more than 5 minutes per side for medium.
  • Serve with salsa and enjoy.

Big Daddy Salsa Recipe: Recipe image

Number Of Ingredients 8

10-12 Yellow Chili's (can also use Jalapeno's if yellow not available but reduce by a couple)
2 bunches of green onions (chopped very small, including green part)
1 bunch of Cilantro (very finely chopped)
5-6 cloves of garlic (sometimes I use more as I love garlic) minced.
1 28 oz can of stewed tomatoes (I buy the diced so I don't have to chop up as much)
1 small can tomato sauce
Salt
Pepper

Steps:

  • *Boil chili's for approximately 10 minutes and chop. (I take the stems off after boiling them). I then put them in my food processor to chop finely along with the cilantro, garlic, tomatoes and tomato sauce. Set processor on "Pulse" and chop to desired consistency. I then add the chopped up onions to the above ingredients. Let stand in the fridge for an hour or two for all the ingredients to get to know each other. Love this stuff and could probably live on it.
