PECAN PATTIES

Number Of Ingredients 7

1 1/2 Cups evaporated milk
3 Cups sugar
1 1/2 Cups Louisiana pecans (or fresh from another state, in pieces)
1 Stick butter or margarine (cut into chunks)
1/2 t . Vanilla extract
Pinch of salt
Waxed or parchment paper

Steps:

  • In heavy saucepan, pour milk, sugar, and salt.
  • Cook on medium heat, stirring often (do not scorch) until boiling.
  • Boil on medium, stirring, until temperature on candy thermometer reaches 235, which is "soft-ball stage".
  • To test for soft-ball stage, get a glass measuring cup with very cold water in it. Drop a bit of candy into the cup, and reach into the cup with your finger and push the candy around into a ball. If it shapes and stays, then it's ready. If not, cook a little more keeping a close eye on the temperature. DO NOT PASS 235, or they will not be the right texture and consistency.
  • Remove the mixture from the heat, using a hot pad on counter AND pan, quickly add butter, vanilla, and pecans.
  • Beat with a spoon until butter is melted and mixture thickens.
  • The thickness you want is where it spreads into a circle on the paper but almost has to be pushed off the spoon. (Do NOT use a metal pan or they will not set properly)
  • Spoon onto paper into two-inch patties.
  • Let the patties cool completely before storing in airtight container in cool place.

PECAN PRALINES

2 cups granulated sugar
1 cups half-and-half
1/3 stick butter
1/8 teaspoon baking soda
1 1/2 cups whole pecans

Steps:

  • Combine all ingredients except the pecans in a heavy saucepan. Over medium heat stir mixture until it comes to a boil. Turn heat down to medium-low and continue to stir. Spoon mixture up on sides of pan to melt any sugar that hasn't melted.
  • Cook until mixture reaches 238 to 241 degrees F on a candy thermometer or soft ball stage. Stir in the pecans. Remove from heat. Stir until the mixture begins to thicken and becomes creamy and cloudy. Drop onto parchment paper, buttered pan or buttered marble slab, using a spoon or ice cream scoop. Let cool.

These wonderful patties have undergone several transformations since I first tried them. I have used different soup mixes to season them, and added chopped nuts for texture. They are tasty with a tomato sauce topping or baked in a mushroom sauce for a fancy dinner. I like them best fixed up like a hamburger with lettuce, tomato, cheese, mayo, ketchup and alfalfa sprouts on a bun or good home-made bread!

1 cup dry brown lentils
2 ½ cups water
¼ cup milk
1 cup wheat and barley nugget cereal (e.g. Grape-Nuts™)
1 (1 ounce) envelope dry onion soup mix
½ teaspoon poultry seasoning
2 eggs, beaten
½ cup chopped walnuts
1 cup seasoned dry bread crumbs
2 tablespoons vegetable oil

Steps:

  • Place lentils and water in a saucepan, and bring to a boil. Cover, reduce heat to low, and simmer until tender, about 30 minutes. Drain.
  • In a large bowl, mix together the cooked lentils, milk, wheat and barley cereal, eggs and walnuts. Season with onion soup mix and poultry seasoning. Mix well using your hands, as the mixture will be very thick. Let stand for 30 minutes, or refrigerate overnight.
  • Heat oil in a large skillet over medium heat. Use an ice cream scoop to portion out balls of the lentil mixture. Drop the scoops into bread crumbs, and coat while flattening into patties. Fry burgers in the hot skillet until nicely browned on both sides, about 5 minutes per side, depending on the thickness of the patties.

I cooked these patties for a Fund Raiser and served over 260 persons, both young and mature. They were a tremendously big hit with all.

2 lbs lean ground beef
2 large eggs, beaten
1/2 cup finely chopped onion
1/2 cup crushed soda crackers or 1/2 cup fine dry breadcrumb
3/4 teaspoon granulated garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons hickory barbecue sauce
6 tablespoons olive oil (for frying)

Steps:

  • In a large mixing bowl, mix together ground round, beaten eggs, onions, soda crackers, garlic powder, salt, pepper and barbecue sauce. Mix until well incorporated.
  • Weigh out hamburger patties to 6 - 7 ounce each.
  • Press together and flatten to about 3 1/2" in diameter or use a mold.
  • The patties should be about 3/4" thick.
  • Using a round wooden spoon handle (about 1/4" round), make a hole in the center of the hamburger pattie.
  • In a frying pan over medium-high heat, heat olive oil.
  • Place 3 patties into the hot oil and fry for about 2 to 3 minutes, the hole will begin to close.
  • Turn patty over and continue to fry for about 2 to 3 minutes.
  • The hole that was made in the pattie will fill in when the hamburger is cooked through properly.
  • Check for doneness to make sure there is no pink showing.
  • NOTE: If the burger mixture does not hold together when squeezed, add some milk and mix to blend.
  • Serve in a nice large bun that is warmed and buttered with a spread of mayonnaise, Dijon mustard, a slice of sweet onion, a slice of a large tomato, and a leaf of lettuce.
  • A slice of Swiss cheese layered on the burger patty is great.
  • A pickle of your choice adds an additional touch.
  • Fry some mushrooms and spread some over the top of the bun.
  • Fried caramalized onions are a good added touch.
  • This makes a fantastic hamburger.

6 cups white sugar, divided
2 cups heavy cream
½ teaspoon baking soda
½ cup butter
1 teaspoon vanilla extract
2 pounds pecan halves or pieces

Steps:

  • Butter a 9x13 inch dish and a medium, heavy saucepan.
  • In the buttered saucepan, combine 4 cups sugar and the cream. Have ready.
  • In a large heavy skillet over medium heat, pour the remaining 2 cups sugar. Cook, stirring constantly, until sugar begins to melt. Place the saucepan over low heat, stirring occasionally. Continue to cook and stir the sugar in the skillet until it is completely melted and light brown. Pour the melted sugar very slowly, in a thin stream, into the lightly simmering cream, stirring constantly (This step may take five minutes, and works best if someone strong pours the melted sugar v-e-r-y s-l-o-w-l-y.)
  • Heat now, without stirring, to 242 to 248 degrees F (116 to 120 degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball. Remove from heat and stir in baking soda (mixture will foam). Drop the butter into the foaming mixture and let rest without stirring 30 minutes.
  • Stir in the vanilla with a wooden spoon and continue to stir vigorously until mixture loses its gloss, 10 to 15 minutes. Then fold in pecans and quickly turn candy into the prepared 9x13 inch dish. Let cool until just warm and cut in 1 inch pieces.

4 teaspoons sugar
1 1/2 cups Bisquick
1/2 cup cottage cheese
1 egg
1 tablespoon lemon juice

Steps:

  • Preheat oven to 400F and grease a pie plate.
  • In medium bowl stir sugar with Bisquick just to combine.
  • Set aside.
  • Put remaining ingredients in a blender.
  • Blend on high speed about 30
  • seconds or until smooth and completely combined.
  • Pour into Bisquick mixture and stir with a large spoon until fully incorporated and dough comes away from the side of the bowl.
  • Dust your hands with Bisquick and knead dough until smooth and elastic - about 5 minutes.
  • Shape dough into 8 equal patties, each about 1 inch thick.
  • Place evenly in pie plate.
  • Brush top of each biscuit with dab of soft butter or margarine.
  • Cover with inverted glass bowl or lid sprayed with nonstick cooking spray.

Patties:
2-8oz pkg. cream cheese softened
6 eggs beaten
1 cup crushed Ritz crackers
1 cup italian seasoned bread crumbs
1 cup pecans chopped very small (not quite crushed)
Mushroom sauce:
1 large (family size) can cream of mushroom soup
1-16oz & 1-8oz container of sour cream
3/4 cup milk

Steps:

  • In large bowl combine beaten eggs and softened cream cheese with fork. Cream cheese should be in pea sized chunks (not blended or whipped). Add remaining ingredients to form a thick mixture. Cracker or bread crumbs may be added to thicken. Form into patties about 1-1/2" in diameter. Heat approx. 1/2" canola oil in frying pan on medium heat. Fry patties in frying pan until browned. Approx. 3 min. on each side. place in 13x9 cassarole dish. Mushroom Sauce: Combine sour cream, mushroom soup and milk in med. sauce pan stir over low - med. heat til' smooth. pour over patties and bake @ 350 til bubbly (approx 30 min.). serve immed.
