Whenever possible, I buy grass fed Bison instead of ground beef. The flavor is much sweeter and because of the higher protein content, smaller portions are more satisfying. No antibiotics, no pesticides in the feed, no preservatives and no growth hormones. Even better, less fat, cholesterol and calories PLUS more iron, protein and B-12 than ground beef! 2 lbs ground buffalo meat (Bison)
3 garlic cloves (pressed or finely minced)
2 eggs, beaten
1/4 medium sweet onion, finely minced
1/2 teaspoon pepper
1/2 cup seasoned bread crumbs
1/2 cup parmesan cheese, grated
1/2 teaspoon salt
2 teaspoons Worcestershire sauce
1/4 teaspoon ground thyme
1 teaspoon oregano
1 teaspoon basil
1 teaspoon sage

Steps:

  • Preheat oven to 350°F
  • Mix all ingredients together in a large bowl. Using your hands works best.
  • Spray a shallow, oval casserole dish or small roasting pan with Pam.
  • Pat meat mixture into dish/pan.
  • Lightly spray top of loaf with Pam.
  • Bake for 1-1/4 to 1-1/2 hours.
  • Can be served as is or with Italian-style sauce.

1 pound baby Yukon Gold or Dutch yellow potatoes
5 tablespoons olive oil, divided
1 1/2 cups chopped crimini (baby bella) mushrooms
1 cup chopped red onion
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh thyme
1 pound ground buffalo meat
1 large egg
3/4 cup tomato sauce, divided
1/2 cup panko (Japanese breadcrumbs)*
1/2 teaspoon salt
1/2 teaspoon cracked black pepper
1/4 teaspoon dried crushed red pepper
1 garlic clove, pressed
2 5-ounce bags fresh spinach

Steps:

  • Preheat oven to 375°F. Toss potatoes with 1 tablespoon oil in medium bowl. Place on 13x9-inch rimmed baking sheet or roasting pan. Sprinkle with salt. Roast 20 minutes.
  • Meanwhile, heat 2 tablespoons oil in medium skillet over medium heat. Add mushrooms and onion; sauté until mushrooms are beginning to brown and onion is translucent, about 4 minutes. Remove from heat; mix in sage and thyme. Cool slightly.
  • Mix buffalo, mushroom mixture, egg, 1/2 cup tomato sauce, panko, salt, and pepper in large bowl. Push potatoes to sides of baking sheet; shape buffalo mixture into 6x3-inch loaf in center of sheet. Roast 30 minutes. Combine 1/4 cup tomato sauce and red pepper in small bowl. Pour over top of meatloaf. Roast 20 minutes longer. Remove from oven; let rest while preparing spinach.
  • Heat remaining 2 tablespoons oil and garlic in large pot over medium-high heat. Add spinach, and toss until wilted, about 3 minutes. Season to taste with salt. Slice meatloaf; serve potatoes and spinach alongside.

2 tablespoons olive oil, plus more for baking dish
2 pounds ground bison
1 yellow bell pepper, stemmed, quartered, seeded, and ribs removed
1 red bell pepper, stemmed, quartered, seeded, and ribs removed
1 large sweet onion, peeled and cut into quarters
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh sage
2 tablespoons chopped fresh oregano
2 cloves garlic, halved
Coarse salt and freshly ground pepper
2 cups homemade or low-sodium store-bought chicken stock
2 cups red wine
1 cup sundried tomatoes, julienned

Steps:

  • Preheat oven to 350 degrees. Lightly oil a large baking dish; set aside.
  • Place 1/2 pound ground bison, 1 piece of yellow pepper, 1 piece of red pepper, 1 piece of onion, 1 1/2 teaspoons rosemary, 1 1/2 teaspoons sage, 1 1/2 teaspoons oregano, and 1/2 clove garlic in the bowl of a food processor; process until well combined. Transfer mixture to a large bowl. Repeat process three more times with remaining bison, peppers, onion, rosemary, sage, oregano, and garlic.
  • Add 2 tablespoons olive oil to bowl with bison mixture and season with salt and pepper; mix until well combined. Using your hands, form bison mixture into a loaf and place in prepared baking dish. Transfer to oven and bake for 30 minutes.
  • Add chicken stock, wine, and tomatoes to baking dish; bake, basting with juices every 15 minutes, until meatloaf is firm to the touch and pan juices are bubbly, about 1 hour more.
  • Let meatloaf stand 5 minutes before slicing and serving with pan juices.

1 slice multigrain bread
1 pound ground buffalo meat
1 onion, diced
1 egg, lightly beaten
1 teaspoon mustard powder
¾ cup canned diced tomatoes, drained
1 teaspoon salt
1 dash ground black pepper
⅓ cup ketchup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Crumble the bread slice into crumbs and set aside. Grease an 8x8 inch baking dish.
  • Thoroughly mix ground buffalo meat, onion, egg, ground mustard, tomatoes, salt, pepper, and bread crumbs in a large bowl.
