Tips:

  • To select the best bitter melon, look for ones that are deep green in color and have a firm texture. Avoid melons that are yellow or have soft spots.
  • Before cooking, soak the bitter melon in cold water for at least 30 minutes to reduce its bitterness. You can also rub the melon with salt and let it sit for 15 minutes before rinsing it off.
  • To make the relish, you can use either fresh or dried shrimp. If using dried shrimp, soak them in hot water for 15 minutes before using.
  • Be careful not to overcook the bitter melon, as it can become tough and bitter. Cook it just until it is tender-crisp.
  • Bitter melon relish can be stored in the refrigerator for up to 2 weeks.

Conclusion:

Bitter melon relish is a delicious and versatile dish that can be enjoyed as a side dish, condiment, or appetizer. It is a good source of vitamins, minerals, and antioxidants. If you are looking for a new and exciting way to enjoy bitter melon, give this relish a try.
