BLACK BEAN AVOCADO SALSA
This has to be my favorite summer salsa. It's colorful and fresh tasting. It makes a bunch, so invite some friends over. I like to take the lime after it's been juiced and rub down the bowl I will be serving the salsa in. I also rub the lime on the plastic wrap this will help keep the avocados from turning brown. Don't forget the tortilla chips!

Steps:
- Combine all ingredients, except avocados, in a large bowl and mix well. Toss with desired amount of dressing.
- Cover and chill for a few hours or overnight. Right before serving, add avocados and mix gently, being careful not to mash avocados.
- Serve at room temperature.
Tips:
- Choose ripe avocados that yield to gentle pressure. Unripe avocados will be hard and green, while overripe avocados will be mushy and brown.
- Use fresh, flavorful tomatoes for the best results. Roma tomatoes or cherry tomatoes are good choices.
- Red onion adds a sharp, slightly spicy flavor to the salad. If you prefer a milder flavor, you can substitute a sweet onion, such as a Vidalia onion.
- Fresh cilantro adds a bright, citrusy flavor to the salad. If you don't have cilantro on hand, you can substitute parsley or basil.
- Feel free to add other ingredients to the salad, such as corn, bell peppers, or jicama.
- Serve the salad immediately or chill it for later. The salad will keep in the refrigerator for up to 3 days.
