1 tablespoon olive oil
2 cans (15 ounces each) black beans, rinsed and drained
2 medium sweet potatoes, peeled and finely chopped
1 can (14-1/2 ounces) vegetable broth
1 teaspoon minced chipotle pepper in adobo sauce
1/4 teaspoon pepper
1/4 teaspoon ground cinnamon
1-1/4 cups uncooked couscous

Steps:

  • In a large skillet, saute onion in oil until tender. Add the beans, sweet potatoes, broth, chipotle, pepper and cinnamon., Bring to a boil. Reduce heat; cover and simmer for 25 minutes. Uncover and simmer 5-10 minutes longer or until potatoes are very tender and mixture is thickened, stirring occasionally., Meanwhile, cook couscous according to package directions. 1 large sweet potato
1 cooking spray
2 (15 ounce) cans black beans, rinsed and drained
½ cup quick cooking oats
¼ cup chopped onion
1 tablespoon Dijon mustard
1 teaspoon ground cumin
¼ teaspoon freshly grated ginger
¼ teaspoon salt
1 pinch ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Poke a few holes into sweet potato with a fork; place on a greased baking sheet.
  • Bake in the preheated oven until sweet potato can be easily pierced with a fork, 35 to 45 minutes. Remove from oven and cool until easily handled. Reduce heat to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.

½ red onion, finely chopped

1 tablespoon olive oil
1 teaspoon curry powder
1 pinch cinnamon
1 small sweet potato, cubed
2 tablespoons onions, diced
2 garlic cloves, minced
1/2 red bell pepper, chopped
3/4 teaspoon paprika
1 (19 fluid ounce) can black beans
1 1/2 tablespoons peanut butter, softened in a couple TBSP warm water
1/2 cup warm water
1/2 lime, juice of
1 teaspoon brown sugar
salt and pepper

Steps:

  • Prep sweet potato, onion, garlic and red pepper.
  • Heat oil, curry powder and cinnamon together in a large pot, stirring until hot.
  • Add cubed sweet potato, onion, garlic, red pepper and paprika. Cook about 4 minutes, stirring often.

Baking the burritos allows the tortillas to create a crispy seal around the contents so nothing falls out.

1/2 onion, chopped
2 cups cooked black beans
