1 tablespoon olive oil
2 cans (15 ounces each) black beans, rinsed and drained
2 medium sweet potatoes, peeled and finely chopped
1 can (14-1/2 ounces) vegetable broth
1 teaspoon minced chipotle pepper in adobo sauce
1/4 teaspoon pepper
1/4 teaspoon ground cinnamon
1-1/4 cups uncooked couscous

Steps:

  • In a large skillet, saute onion in oil until tender. Add the beans, sweet potatoes, broth, chipotle, pepper and cinnamon., Bring to a boil. Reduce heat; cover and simmer for 25 minutes. 1 tablespoon olive oil
Kosher salt
1 cup cooked black beans (if canned, rinsed and drained)
1 cup shredded sharp Cheddar

2 tablespoons extra-virgin olive oil
1 teaspoon chili powder

sea salt and freshly cracked black pepper to taste
4 (12 inch) flour tortillas
2 cups shredded old Cheddar cheese
1 (19 ounce) can black beans, rinsed and drained
½ cup salsa
2 cups shredded Monterey Jack cheese
¼ cup sour cream, for topping
¼ cup chopped fresh cilantro for garnish
