2 (16 ounce) cans black beans, drained and rinsed
2 large tomatoes, diced
4 ounces salsa
1/2 teaspoon cumin
1/4 cup cilantro (to taste)
1/4 cup cheddar cheese, shredded
4 ounces spinach

Steps:

1 1/2 tablespoons olive oil
2 cloves garlic, minced
1 cup chopped red bell pepper
1 cup chopped yellow bell pepper
1 cup chopped zucchini
1 cup chopped peeled yellow squash
1 cup chopped red onion
1 teaspoon ground cumin
1 tablespoon chili powder
1/2 teaspoon oregano
salt and pepper
1 (15 ounce) can black beans, drained
1 cup shredded monterey jack pepper cheese
4 10-inch flour tortillas
4 tablespoons chopped fresh cilantro

Steps:

  • In a large fry pan, heat oil over medium-high heat.
  • Add garlic, peppers, zucchini, squash, and onion.
  • Saute for 8-10 minutes or until crisp-tender.

1/2 cup finely chopped onion
1/4 cup sliced green onion
1 teaspoon ground coriander
1 teaspoon ground cumin
1 tablespoon canola oil
1/4 cup chopped fresh cilantro
1 (15 ounce) can black beans, rinsed and drained
1/2 cup water
1 tablespoon lime juice
1 teaspoon finely chopped canned chipolte chile pepper in adobo sauce
1/4 teaspoon salt
32 inches whole wheat tortillas (omit if strictly watching carbs)
12 ounces chopped cooked chicken (about a cup)
4 cups shredded romaine lettuce or 4 cups whole fresh baby spinach leaves
1 cup chopped fresh cilantro
4 tablespoons bottled salsa

Steps:

  • For the spread:.
  • In a covered small saucepan cook onions, coriander, and cumin in hot oil about 20 minutes or until very tender, stirring occasionally. Remove from heat. Stir in cilantro.
