¾ cup unsweetened cocoa powder
2 teaspoons baking soda

2 eggs
1 cup strong brewed coffee
1 cup buttermilk
½ cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans or one 9x13 inch pan.
  • In large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt. Make a well in the center.
  • Add eggs, coffee, buttermilk, oil and vanilla. Beat for 2 minutes on medium speed. Batter will be thin. Pour into prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until toothpick inserted into center of cake comes out clean. Cool for 10 minutes, then remove from pans and finish cooling on a wire rack. Fill and frost as desired.

1/2 cup soybeans (soaked overnight with lentils) or 1/2 cup black-eyed peas (soaked overnight with lentils)
1 big onion (chopped)
1 tablespoon garlic (finely chopped)

1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 pinch asafoetida powder (optional)

2 tablespoons butter

Steps:

  • Put soaked lentils and soyabeans in a cooker with 4 cups of water.
  • Add salt, turmeric powder and onions along.
  • Pressure cook for 18-20 minutes on medium heat.
  • If you do not use a pressure cooker then you have to wait till the ingredients turn absolutely tender and may have to increase the quantity of water in the pot.
  • This will take a longer time.
  • Meanwhile take a pan and melt the butter.
  • Add garlic and brown the same.
  • Add all the remaining spices and turn the heat off.
  • Open the cooker and mash dal gently.
  • Transfer the same to the pan.
  • Add some water if the consistency is too thick.
  • Take care that it does not turn too watery.
  • Garnish with fresh coriander leaves.
  • Serve warm with a dash of fresh cream.
  • This goes well with steamed white rice and Indian breads.

2 c surgar, divided
1 stick butter, melted
1 c self rising flour
1/4 tsp salt
1/3 c cocoa powder
1 c 2 % reduced fat milk

  • 1. Place butter and batter in the bottom of the pan, spoon on the fruit, When the cobler bakes, the crust rises through the fruit to the top, Self-Rising Flour is a MUST.

2 tsp baking soda
1 tsp baking powder
1 tsp salt

1 c strong black coffee or 2 tsps powdered instant coffee plus 1 cup boiling water
1 c buttermilk or sour milk*
1/2 c vegetable oil
1 tsp pure vanilla extract

Steps:

  • 1. Heat oven to 350 degrees F. Grease and flour (2) 9 inch round baking pans or (1) 13x9x2 baking pan.
  • 2. In large mixer bowl, stir together sugar, flour, cocoa, baking soda, baking powder and salt. Add eggs, coffee, buttermilk, oil and vanilla; beat on medium speed of electric mixer 2 minutes (batter will be thin). Pour patter into prepared pan(s).
  • 3. Bake 30 to 35 minutes for round pans, 35 to 40 minutes for rectangular pan or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost as desired.
  • 4. *To sour milk: Use 1 Tablespoon white vinegar plus milk to equal 1 cup. For buttermilk I use powdered buttermilk that I push through a small screened strainer adding it to the dry ingredients, following the directions to make 1 cup buttermilk.
