RESTAURANT-STYLE SALSA

Food Network's Ree Drummond shares her recipe for homemade restaurant-style salsa that the whole family will love!

Provided by Ree Drummond : Food Network

Categories     condiment

Time 1h15m

Yield 12 servings

Number Of Ingredients 10

Two 10-ounce cans diced tomatoes and green chiles, such as Rotel
One 28-ounce can whole tomatoes with juice
1/2 cup fresh cilantro leaves (or more to taste!)
1/4 cup chopped onion
1 clove garlic, minced
1 whole jalapeno, quartered and sliced thin, with seeds and membrane
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon sugar
1/2 whole lime, juiced

Steps:

  • Combine the diced tomatoes, whole tomatoes, cilantro, onions, garlic, jalapeno, cumin, salt, sugar and lime juice in a blender or food processor. (This is a very large batch. I recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.)
  • Pulse until you get the salsa to the consistency you'd like. I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
  • Refrigerate the salsa for at least an hour before serving.

BLENDED SALSA (TYPICAL RESTAURANT STYLE)

Blended Salsa (Typical Restaurant Style) image

There's just something about the chips and salsa that are put down in front of me when I visit my neighborhood Mexican joint. It's a typical Tex-Mex place. This is the kind of salsa that's simple and can't be replicated by a store bought, jarred version. Fresh tomatoes are NOT the way to go to get the flavor I'm looking for. Don't get me wrong, fresh pico de gallo is just as easy and delicious. Canned tomatoes have the correct flavor and consistency.

Time 5m

Yield 1-20 serving(s)

Number Of Ingredients 8

2 (14 1/2 ounce) cans tomatoes, drained (leave some liquid for thinner salsa)
1/2 onion, finely diced (whatever kind of onion you like)
2 teaspoons minced garlic
1 tablespoon fresh lime juice
1 teaspoon kosher salt
1 teaspoon chili powder
1 jalapeno, seeded and cut into pieces
1/4 cup cilantro

Steps:

  • Place all of the ingredients in a blender or food processor. Blend on low 10-30 seconds depending on the desired consistency. While it tastes great right away, you get the best flavor if you let it sit for a few hours or overnight.

Tips:

  • Use ripe tomatoes: The riper the tomatoes, the sweeter and more flavorful your salsa will be.
  • Roast your tomatoes: Roasting tomatoes intensifies their flavor and gives them a slightly smoky taste.
  • Use a variety of peppers: Different peppers will give your salsa different levels of heat and flavor. For a mild salsa, use green bell peppers. For a medium salsa, use poblano peppers. For a hot salsa, use serrano or habanero peppers.
  • Don't over-blend your salsa: You want your salsa to have some texture, so don't blend it until it's completely smooth. A few small chunks of tomatoes and peppers are okay.
  • Season your salsa to taste: Add salt, pepper, and other seasonings to taste until you get the flavor you want.
  • Chill your salsa before serving: Chilling your salsa allows the flavors to meld together and makes it more refreshing.

Conclusion:

Blended salsa is a delicious and versatile condiment that can be used in a variety of dishes. It's perfect for tacos, burritos, nachos, and quesadillas. It can also be used as a dipping sauce for chips or vegetables. With so many different recipes to choose from, you're sure to find one that you love. So next time you're looking for a quick and easy snack or condiment, give blended salsa a try. You won't be disappointed!
