I haven't tried this, but I like the sound of it! I got it from the Simple Living message boards, but the poster said they just got it from somewhere on the internet. By the way- the rice, oats, groats, or whatever should be raw.

BLENDER PANCAKES

This is a recipe from my Bosch cookbook: Healthy Recipes from the Heart of Our Homes by Phyllis Stanley. You could use straight milk (or buttermilk) instead of water and powdered milk. These turn out really fluffy. I love the way it foams up in the blender!

Tips:

  • To achieve a fluffy texture in your waffles and pancakes, make sure to separate the egg yolks from the whites and whip the egg whites until stiff peaks form. This step incorporates air into the batter, resulting in a light and airy texture.
  • For a crispy exterior and a tender interior, let the batter rest for a few minutes before cooking. This allows the ingredients to fully hydrate and develop their flavors.
  • Use a well-seasoned waffle iron or pancake griddle to prevent sticking. If you're using a nonstick surface, you may still need to lightly grease it with cooking spray or butter.
  • Cook the waffles or pancakes over medium heat to ensure even cooking throughout. Avoid high heat, as this can easily burn the outside while leaving the inside undercooked.
  • For perfectly round pancakes, pour the batter onto the hot griddle using a measuring cup or a large spoon. For waffles, fill each section of the waffle iron with enough batter to cover the bottom.
  • Flip the waffles or pancakes when they start to bubble and the edges become slightly dry. This indicates that the underside is cooked and it's time to flip them over.
  • To keep your waffles and pancakes warm while you cook the rest of the batter, place them on a wire rack in a preheated oven at 200°F (93°C).

Conclusion:

With these simple tips and tricks, you can easily whip up delicious and fluffy waffles and pancakes using your blender. Whether you prefer the classic taste of plain waffles or the indulgence of chocolate chip pancakes, the possibilities are endless. So gather your ingredients, preheat your waffle iron or griddle, and let your creativity shine in the kitchen. Enjoy your homemade breakfast treats and make every morning a special occasion!
