1 cup chopped red bell pepper
1 cup crumbled feta cheese (about 4 ounces)
1/2 cup diced sharp white cheddar cheese ( about 2 1/2 ounces)

Tips:

  • Make the pasta salad ahead of time for easy meal prep. It will keep well in the refrigerator for 3-4 days.
  • Use a variety of olives for a more complex flavor. I like to use a mix of black olives, green olives, and Kalamata olives.
  • If you don't have blue cheese dressing, you can make your own by mixing mayonnaise, sour cream, blue cheese crumbles, and a little bit of vinegar or lemon juice.
  • Add some chopped fresh herbs, such as basil, parsley, or chives, to the pasta salad for an extra pop of flavor.
