Time 45m

Yield 12 blondies

Number Of Ingredients 10

1/2 pound (2 sticks) unsalted butter, at room temperature
1 cup light brown sugar, lightly packed
1/2 cup granulated sugar
2 teaspoons pure vanilla extract
2 extra-large eggs, at room temperature
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 1/2 cups chopped walnuts
1 1/4 pounds semisweet chocolate chunks, such as Nestle's

Steps:

  • Preheat the oven to 350 degrees. Grease and flour an 8 x 12 x 2 inch baking pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter, brown sugar, and granulated sugar on high speed for 3 minutes, until light and fluffy. With the mixer on low, add the vanilla, then the eggs, one at a time, and mix well, scraping down the bowl. In a small bowl, sift together the flour, baking soda and salt and with the mixer still on low, slowly add flour mixture to the butter mixture. Fold the walnuts and chocolate chunks in with a rubber spatula.
  • Spread the batter into the prepared pan and smooth the top. Bake for 30 minutes exactly. Don't overbake! A toothpick may not come out clean. Cool completely in the pan and cut into bars.

Time 1h5m

Yield 16 blondies

Number Of Ingredients 10

1 1/2 sticks (12 tablespoons) unsalted butter, melted and cooled, plus more for the pan
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 1/2 cups packed dark brown sugar
1 tablespoon vanilla extract
2 large eggs, lightly beaten
1/2 cup toasted walnuts, coarsely chopped
1 cup plus 2 tablespoons bittersweet chocolate chips
Flaky sea salt, to garnish

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking pan. Line the pan with parchment, leaving an overhang, then butter the parchment.
  • Whisk the flour, baking powder and salt together in a medium bowl and set aside. In another bowl, whisk the melted butter and brown sugar together until combined. Add the vanilla and eggs and stir to combine. Fold the flour mixture into the wet ingredients, being careful not to overmix. Fold in the walnuts and 1 cup of the chocolate chips. Pour the batter into the prepared pan and smooth the top. Scatter the remaining 2 tablespoons chocolate chips over the batter.
  • Bake until the top is a light golden brown, 20 to 25 minutes, being careful not to overbake. Let cool on a wire rack. Remove the blondies from the pan and transfer to a cutting board. Cut into rectangles, sprinkle with flaky salt and serve.

BROWN BUTTER BLONDIES

Time 1h55m

Yield 18 blondies

Number Of Ingredients 9

3 sticks (1 1/2 cups) butter, plus more for greasing the baking pan
3 cups light brown sugar
3 extra-large eggs
1 1/2 teaspoons pure vanilla extract
3 cups all-purpose flour
1 tablespoon baking powder
1 1/2 teaspoons kosher salt
3/4 cup toasted walnuts, roughly chopped
1/2 cup white chocolate chips

Steps:

  • First, brown the butter: Place it in a medium saucepan over low heat to cook. Check it after about 10 minutes; it should be a medium-brown color (not too light, not too burned). Once it reaches that color, take it off the heat and let it cool.
  • Preheat the oven to 350 degrees F and grease a 9-by-13-inch baking pan.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the cooled brown butter and brown sugar until creamy, about 2 minutes. Add the eggs and vanilla and mix, scraping the sides of the bowl. Add the flour, baking powder and salt and mix until combined. Fold in the walnuts and white chocolate chips.
  • Press the mixture evenly into the prepared pan.
  • Bake the blondies for about 35 minutes, or until a toothpick inserted into the center comes out with only a few crumbs stuck to it (I like these blondies gooey, so I go with a little less time). Let cool completely on a wire rack, then cut them and wrap individually in plastic wrap so the sides don't dry out. Store in the freezer or at room temperature.

Time 45m

Yield 16-32 bars

Number Of Ingredients 10

1 cup butter, softened
1 cup sugar
2/3 cup packed light brown sugar or 2/3 cup dark brown sugar
2 large eggs
2 teaspoons vanilla extract
2 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
2 cups semi-sweet chocolate chips, melted
1 (14 ounce) can sweetened condensed milk

Steps:

  • Preheat oven to 375°F.
  • Grease and flour a 9 x 13 baking pan.
  • In a large bowl, cream together the butter and both sugars until light and fluffy.
  • Beat in the eggs, then the vanilla until smooth and well blended.
  • In another bowl, stir together the flour, baking powder, and salt.
  • Add to the creamed mixture just until combined; do not overmix.
  • Spread half the batter in the prepared pan.
  • Stir together the melted chocolate and condensed milk to form a fudge-like mixture; spread in an even layer over the batter.
  • Cover with the remaining batter.
  • (The easiest way to do this is to drop little mounds of dough over the filling. Then, using your fingertips, pinch the pieces together until they make a fairly even layer. You won't be able to cover the filling completely--that's okay.) Bake for 25 minutes, or until a toothpick tests done.
  • Cool on a wire rack before cutting into bars.

Tips:

  • For the best results, use fresh cremini mushrooms. If you can't find cremini mushrooms, you can use white button mushrooms instead.
  • Be sure to cook the mushrooms until they are soft and browned. This will help to bring out their flavor.
  • If you don't have any balsamic vinegar, you can use white wine vinegar or apple cider vinegar instead.
  • Be careful not to overcook the blondies. They should be cooked until they are just set in the center.
  • Let the blondies cool completely before you cut them into bars. This will help to prevent them from falling apart.

Conclusion:

These blondies are a delicious and easy-to-make treat. They are perfect for any occasion, and they are sure to be a hit with your friends and family. So next time you're looking for a sweet and savory snack, give these blondies a try. You won't be disappointed!
