BLT MACARONI SALAD

A friend served this BLT pasta salad, and I just had to get the recipe. My husband loves BLT sandwiches, so this has become a favorite of his. It's nice to serve on hot and humid days, which we frequently get during summer here in Virginia. -Mrs. Hamilton Myers Jr., Charlottesville, Virginia

BLT MACARONI SALAD

BLT Macaroni Salad image

My DH always raved about my mom's pasta salad until I found the inspiration for this recipe in TOH June 2002. Now he doesn't like it any other way. I have modified the original recipe over the years & now need to post it here for safe-keeping because the clipping is falling apart. UPDATE: May 2010 - I'd like to add that this recipe has now been tested with gluten free pasta and turkey bacon and was just as delicious as the posted recipe. Keep in mind though that a little extra mayo was needed with the GF pasta. :)

Time 30m

Number Of Ingredients 5

8 oz cooked low carb elbow macroni
4 slice turkey bacon
2 large tomatoes, beef steak or vine ripened
4 Tbsp reduced fat mayo
2 c spinach

Steps:

  • 1. cook the macaroni until tender drain and rinse with cold water and put it in the fridge.
  • 2. cook the turkey bacon till it is crisp. I use the microwave then break it up into small bitesize pieces.
  • 3. Chop tomato into bite size pieces and stir into the cooled macaroni
  • 4. combine the bacon spinach and the mayo and mix till it is coated...salt and pepper and serve.

Tips:

  • Use high-quality ingredients for the best flavor. Look for fresh vegetables, crisp bacon, and a flavorful mayonnaise.
  • Cook the bacon until it is crispy, but not overcooked. This will give the salad a nice smoky flavor.
  • Use a variety of lettuces for a more interesting texture. A mix of romaine, iceberg, and arugula is a good option.
  • Don't overdress the salad. A little bit of mayonnaise goes a long way.
  • Serve the salad immediately, or it will become soggy.
