1 pound sliced bacon
1 ½ cups light Ranch-style salad dressing
1 small onion, chopped
2 tomatoes, chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the pasta, and cook until tender, about 8 minutes. Drain, and rinse under cold water to cool.
  • Meanwhile, cook the bacon in a large deep skillet over medium-high heat until browned and crisp. Remove from the pan and drain on paper towels.
  • In a large bowl, stir together the Ranch dressing, onion, and tomatoes. Mix in the cooled pasta. The pasta will absorb some of the dressing, so don't worry if it seems like too much. Refrigerate for several hours or overnight. Crumble bacon over the top just before serving.

1 tablespoon olive oil
½ pound bacon, cut crosswise into 1-inch pieces
2 cloves garlic, minced
2 teaspoons lemon zest
⅔ cup creme fraiche
2 cups ditalini pasta
2 cups halved cherry tomatoes
4 cups baby arugula, coarsely chopped
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 tablespoon freshly shredded Parmesan cheese, or to taste

Steps:

  • Pour olive oil into a heavy skillet over medium heat, add bacon, and cook until almost crisp, 5 to 8 minutes. Turn off heat. Hold a paper towel with tongs and mop up excess bacon grease with the paper towel, leave about 2 teaspoons bacon grease in the skillet.
  • Stir minced garlic and lemon zest into bacon in the skillet and let cook in residual heat until fragrant, 2 to 3 minutes. Stir creme fraiche into bacon mixture.
  • Bring a large pot of salted water to a boil and stir in 2 cups of ditalini. Cook till tender, about 8 minutes. Drain and add pasta to the skillet. Stir pasta thoroughly into bacon and creme fraiche mixture.
  • Return skillet to medium heat. Add tomatoes; cook and stir until slightly softened, about 1 minute. Mix in arugula, stirring until wilted, about 30 seconds, and turn off heat.

8 ounces bacon, diced into 1/2-inch pieces
1 pound cherry tomatoes, halved
Kosher salt and black pepper
5 ounces baby arugula
1/2 cup grated Pecorino Romano, plus more for serving
Flaky salt, for serving (optional)

Steps:

  • Bring a large pot of well-salted water (2 heaping tablespoons kosher salt to about 7 quarts water) to a boil. Add pasta and cook until it is just under al dente, 1 minute less than package directions. Reserve 1 cup of the pasta cooking water, and drain the pasta.
  • Meanwhile, make the sauce: Place the bacon in a large skillet and cook over medium-low heat until crisp, stirring occasionally to make sure it does not burn, about 8 minutes. Remove with a slotted spoon and set aside on a plate lined with paper towels. Turn heat to medium and add the tomatoes to the skillet, tossing them to coat in the bacon fat. Season with salt and pepper. As the moisture from the tomatoes releases, scrape any browned bits that have accumulated at the bottom of the pan (add a few tablespoons of the pasta water if you need to) and continue to cook until the tomatoes begin to fall apart, about 5 to 7 minutes more. Add half the cooked bacon back to the skillet and toss to combine.
  • Increase the heat to medium-high and add the pasta directly to the skillet tossing to coat with the sauce. Add the arugula and 1/4 cup of the pasta water and carefully toss (you'll have a very full pan) until the arugula wilts. Add the cheese and an additional 1/4 cup pasta water and toss together until the cheese emulsifies and the pasta is glossy with sauce. If needed, add another 1/4 cup pasta water to loosen the sauce.
  • Serve in bowls and top with remaining bacon. Pass the grated Pecorino Romano at the table and season with flaky salt, if desired.

1 lb elbow macaroni
1 tablespoon extra virgin olive oil
8 slices bacon, coarsely chopped
2 large leeks, trimmed of roots and dark green tops
coarse black pepper
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1/2 teaspoon cayenne pepper
1 teaspoon paprika
3 cups whole milk
1 cup chicken stock or 1 cup broth
3 1/2 cups grated gruyere cheese
1 tablespoon Dijon mustard
1 pint cherry tomatoes
3/4 cup plain breadcrumbs

Steps:

  • Place a pot of water on to boil for the pasta. When the water reaches a boil, add some salt and the pasta, and cook until al dente.
  • While the pasta cooks, heat a large skillet over medium heat. Add extra-virgin olive oil and chopped bacon and cook until crisp.
  • While bacon is cooking, split the trimmed leeks in half lengthwise, lay the leeks cut side down and thinly slice into half-moons. Fill a large bowl with water and mix the leeks into the water.
  • Allow the water to settle and the dirt and the grit to settle to the bottle of the bowl. Using your hands, draw the leeks from the water, taking care not to unsettle the dirt.
  • Drain the cleaned leeks on a kitchen towel, pat dry and, and then add to the pan with the bacon. Season the leeks with salt and pepper. Cook until leeks are tender, about 3 to 4 minutes.
  • To start the cheese sauce, heat a medium sauce pot over medium heat. Add the butter and melt, then add the flour, cayenne, and paprika and whisk together over the heat until the roux bubbles; cook for 1 minute more.
  • Whisk in the milk and stock and raise the heat a little. Bring the sauce to a quick boil and simmer to thicken, about 5 minutes.
  • Remove the sauce from the heat and whisk in 3 cups of the grated cheese and the mustard. Set aside.
  • Add the cherry tomatoes to the leeks and continue to cook for 2 minutes. Remove from the heat and reserve.
  • Preheat the broiler.
  • Drain the pasta and add it back to the pasta pot. Combine the reserved leek mixture and the cheese sauce with the pasta. Season with salt and pepper to taste.
  • Transfer the pasta to a baking dish. Combine the remaining ½ cup of grated cheese with the bread crumbs.
  • Top the pasta with the mixture. Place the dish under the broiler until the cheese melts and the bread crumbs are brown.

1 (7 ounce) box elbow macaroni
8 slices bacon, cooked crisp and crumbled
3 roma tomatoes, diced
1/2 head iceberg lettuce, shredded
3 -4 green onions, chopped
3/4 cup mayonnaise
1/2 cup barbecue sauce (I prefer using any original flavor)
1/2 teaspoon salt
1/2 teaspoon pepper
2 -3 tablespoons lemon juice (I often use fresh squeezed)

Steps:

  • Fry bacon until crisp, place on paper toweling to drain.
  • Cook pasta following package directions.
  • While pasta is cooking crumble bacon, chop tomatoes, and green onion.

12 slices bacon, divided
4 cups chicken broth
2 (14 1/2 ounce) cans diced tomatoes
1 medium onion, chopped
4 cloves garlic, chopped
1/2 teaspoon crushed red pepper flakes
12 ounces uncooked linguine pasta
1/4 teaspoon salt
1 cup loosely packed fresh parsley, chopped
4 ounces cream cheese, cubed
1 ounce parmesan cheese, grated
halved grape tomatoes, a small handful

Steps:

  • Slice the bacon cross wise into strips. Cook in a large skillet with high sides for 8-9 minutes or until crisp. Remove bacon and drain on paper towels. Drain skillet, leaving 1 tablespoon of bacon drippings in the skillet.
  • Place broth and diced tomatoes in a large bowl. Microwave, covered, on high for 6-8 minutes or until hot. Return skillet to heat and add onion and red pepper flakes. Saute for 2-3 minutes or until tender. Add garlic and cook for 10-20 seconds. Add broth mixture, pasta, salt and half of the cooked bacon. Simmer covered for 9-10 minutes or until pasta is almost cooked by still firm. Stir occasionally.
  • Remove skillet from heat and add cubed cream cheese, grape tomatoes and parsley, reserving 1 tbsp of parsley for garnish. Cover and let stand for 5 minutes or until pasta is tender and sauce is thickened. Serve with remaining bacon, grated Parmesan cheese and reserved parsley.

1 lb penne pasta
5 -6 slices good quality bacon, sliced across into 1/2-inch thick slices
3 medium leeks, trimmed, halved lengthwise and sliced 1/2-inch thick
4 garlic cloves, thinly sliced
black pepper
1 round tablespoon tomato paste
1/2 cup dry white wine
4 tomatoes, skinned, seeds removed and diced
1 (5 1/2 ounce) package boursin cheese combined with 3 tablespoons minced mixed herbs such as thyme, sage, rosemary and parsley
parmigiano-reggiano cheese, grated

Steps:

  • Bring a large pot of water to a boil for the pasta. Once at a full rolling boil, salt water and cook pasta to al dente.
  • In medium sized saute pan, fry the bacon until almost crisp.
  • Drain and set aside.
  • In the remaining bacon drippings, add leeks and garlic and season with pepper. Stir a few minutes to soften then add tomato paste and stir a minute more; add wine and reduce by half. Add tomatoes and heat through.
  • Stir in the cheese, reduce heat to low and cook until melted.
  • Reserve about 1/2 cup starchy cooking liquid just before draining pasta, then drain, return to the pot and add sauce to the pasta.
  • Add the bacon in and toss, using starchy water to combine. Adjust the seasoning of pasta to taste, serve in shallow bowls topped with Parmesan cheese if desired.

This is summer in a bowl. The flavor of a BLT really comes through, with a bit of BBQ sauce for a kick. It's great any time of year as a main dish or a side. People always ask for the recipe wherever I take this salad.

2 1/2 cups uncooked bow tie pasta
6 cups torn romaine lettuce
20 bite size cherry tomatoes
6 bacon, strips cooked and crumbled
1/3 cup reduced-fat mayonnaise
1 tablespoon barbecue sauce (any flavour is good)
1 1/2 teaspoons white vinegar
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions. Drain and rinse under cold water.
  • In a big serving bowl, combine the pasta, romaine, cherry tomatos and bacon bits.
  • In a small bowl, whisk together the mayonnaise, barbecue sauce, vinegar and pepper. Pour over pasta mixture and toss to coat evenly.
  • Serve immediately.
  • This is also really good with leftover chicken chopped up and mixed inches Prep time does not include the cooking time.

This salad is great any time and for any occasion. It's delicious too! You can half the recipe if need be. Great for game day parties and cook outs.

1 box (12oz - 16 oz) bow tie pasta cooked and drained (you can use med shell pasta in place of bow ties)
2/3 bottle Hormel bacon bits
10-12 ripe cherry tomatoes halved
3 c shredded lettuce "or" 1/2 head lettuce chopped small
1/4 c diced red onion
1 - 1 1/2 c Hidden Valley ranch dressing
salt / pepper to taste
OPTIONAL:
1/2 c black olive slices (optional)
1/3 c shredded cheddar cheese (optional)

Steps:

  • 1. In large salad bowl add drained bow tie pasta and all ingredients except for lettuce. Mix and toss well. Keep refrigerated until ready to serve. Add lettuce to salad just before serving ( you can add it sooner but its better to wait just before serving time especially if you are using the shredded lettuce ... you be the judge.)
  • 2. Suggestion: You can use 1 cup Miracle whip w/3tbs sour cream in place of the Hidden Valley Ranch dressing. Optional: black olives slices Optional: shredded cheddar cheese garnish (approx 1/3 cup)

1/2 cup mayonnaise or 1/2 cup salad dressing
1/8 cup lemon juice concentrate
1 teaspoon sugar
1 teaspoon chicken flavor instant bouillon
1 (3 1/2 ounce) package rotini pasta or 1 (3 1/2 ounce) package other pastas, cooked and drained
4 slices bacon, cooked and crumbled
1/2 large tomato, seeded and chopped
1/8 cup green onion, sliced
2 cups lettuce, thinly sliced
Directions

Steps:

  • Combine mayonnaise, lemon juice, sugar and bouillon for the dressing. 2 Combine rotini, bacon, tomato, and green onion. 3 I recommend waiting until you are ready to serve before mixing in the lettuce.

Tips:

  • Use high-quality ingredients for the best flavor. Look for ripe tomatoes, crispy bacon, and fresh lettuce.
  • Cook the pasta al dente so that it still has a slight bite to it.
  • Don't overcook the bacon. Cook it until it is just crispy.
  • Use a light hand when dressing the pasta. You don't want to weigh it down with too much mayonnaise or dressing.
  • Add some freshly ground black pepper to taste.
  • Serve the pasta immediately, while it is still warm.
