2 tablespoons sugar

2 cups low-fat buttermilk
1/2 cup (1 stick) unsalted butter, melted and cooled
2 large eggs
1 cup fresh blueberries (6 ounces), plus more for serving
Nonstick cooking spray
Sweetened creme fraiche and confectioners' sugar, for serving

Steps:

  • Preheat oven to 275 degrees; set a rack on a baking sheet and place in oven. Preheat waffle iron according to manufacturers instructions.

1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 -2 teaspoon sugar
2 large eggs, beaten
4 tablespoons butter, melted
2 cups buttermilk
1/2 teaspoon vanilla
1 cup fresh blueberries (you can probably add more, but that was all I had)

Steps:

  • In a mixing bowl, mix flours, baking powder, baking soda, salt and sugar.
