1/2 teaspoon baking soda
5 teaspoons cinnamon
1/2 teaspoon nutmeg
2 cups sugar
5 eggs beaten
1/2 cup vegetable oil
2 cups frozen blueberries, unthawed

Steps:

  • Scrub sweet potatoes and cook in boiling water for 20 minutes or until soft. Drain, reserving 1/4 cup liqiud; set aside. Peel and mash enough sweet potatoes to measure 2 cups; set aside to cool completely. In another large bowl, combine by hand the mashed sweet potatoes, 1/4 cup liquid, sugar, eggs, and oil. (Batter will be lumpy.) Add flour mixture to sweet potato mixture, and stir just until moistened. (batter will be stiff.) Fold in blueberries. Spoon mixture into 2 greased 11x7x4 loaf pan. Tips:

  • Choose sweet potatoes with vibrant orange flesh: This indicates a higher concentration of natural sugars, resulting in a sweeter bread.
  • Roast the sweet potatoes: Roasting intensifies their sweetness and enhances their flavor.
  • Use ripe blueberries: They are sweeter and juicier, contributing to a more flavorful bread.
  • Cream the butter and sugar until light and fluffy: This incorporates air into the mixture, resulting in a lighter and more tender bread.
  • Gradually add the eggs: This prevents the batter from curdling.
  • Fold in the mashed sweet potatoes and blueberries gently: Overmixing can result in a tough bread.
  • Bake the bread at the right temperature: A moderate oven temperature ensures that the bread cooks evenly without overbrowning.
  • Use a toothpick to check for doneness: Insert a toothpick into the center of the bread; if it comes out clean, the bread is done.
  • Let the bread cool completely before slicing: This allows the flavors to meld and the bread to set properly.
