½ cup butter or margarine
1 cup white sugar
⅓ cup unsweetened cocoa powder
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
¾ teaspoon baking powder
¼ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
  • Melt butter in medium sauce pan. Remove from heat, and stir in sugar and cocoa. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the chocolate mixture until just blended. Fold in walnuts, if desired. Spread the batter evenly into the prepared pan.
  • Bake for 25 minutes in the preheated oven, or until a wooden pick inserted into the center comes out clean. Cool in pan on a wire rack.

4 ounces unsweetened chocolate squares
4 ounces semi-sweet chocolate baking squares
1/3 cup butter
6 ounces cream cheese, softened
2 cups sugar, divided
6 large eggs, divided
1 teaspoon vanilla extract
2 tablespoons flour
9 ounces semi-sweet chocolate chips, divided
2 teaspoons vanilla extract
1 cup flour
1 teaspoon baking powder
1 teaspoon salt
1 cup whipping cream
8 ounces semi-sweet chocolate chips
1/2 cup butter
1 cup light brown sugar
1/2 cup whipping cream
1/2 teaspoon vanilla extract

Steps:

  • Microwave first 3 ingredients until melted. Cool slightly.
  • Beat cream cheese and 1/4 cup butter at medium speed until creamy. Gradually add 1/2 cup sugar. Add 2 eggs, 1 at a time. Stir in 1 teaspoon vanilla. Fold in 2 tablespoons flour and 1/2 cup chocolate morsels.
  • In a separate bowl beat remaining four eggs and add 1 1/2 cups sugar. Add melted chocolate mixture and 2 tsp vanilla. Add 1 cup flour, baking powder, and salt. Stir in remaining 1 cup chocolate morsels.
  • Reserve 3 cups of chocolate batter. Pour remaining chocolate batter into a 13 X 9 inch greased pan. Pour cream cheese batter over this. Top with remaining chocolate batter. Swirl with knife.
  • Bake at 325 degrees for 40 to 45 minutes until toothpick comes out clean.
  • Serve with caramel and chocolate sauce. Spread a thin layer of caramel sauce on bottom of plate. Place brownie square in center. With chocolate sauce squirt dots around brownie. Using a toothpick pull through to make a swirl design.
  • Chocolate Sauce: Bring cream to boil in heavy sauce pan. Remove from heat. Add chocolate and stir until melted. Place in squirt bottle to swirl into caramel sauce.
  • Caramel Sauce: Melt butter in heavy sauce pan over medium heat. Add sugar and stir constantly. After mixture boils, add cream and vanilla. Remove from heat.

1 3/4 c black beans,well drained (or 1, 15 oz can)
3/4 c cocoa powder
3/4 c raw or cane sugar
1 1/2 tsp baking powder
2 large flax eggs (you can use real eggs, but it will no longer be vegan)
3 Tbsp coconut oil, melted
1 tsp real vanilla extract
1/4 tsp sea salt
1 small bag crushed walnuts
TO MAKE FLAX EGG MIXTURE
2 1/2 Tbsp ground flax seed
6 Tbsp water

Steps:

  • 1. Preheat oven to 350 F. Lightly grease regular sized (12) cupcake pan. *Do not use liners
  • 2. Add flax and water into food processor and give it a few pulses. Set aside for a couple of minutes. * If using real eggs omit this step.
  • 3. Now, Combine all the ingredients (except walnuts and other toppings) into food processor and puree about 3 minutes. Scrape down sides as needed. You want it smooth. If too thick add a couple more tablespoons water. (I had to add about 3 Tbsp more). You do NOT want a runny batter. It will be like a thick pancake batter, almost as thick box mix brownies.
  • 4. Distribute evenly into cupcake pan. Bang onto countertop to even up tops. Sprinkle a little walnuts on tops and bake 20 - 30 minutes or until edges pull away slightly and the edges are dry. (mine took about 35 minutes) The middle will be a little on the soft side. Let set in pan 30 minutes before removing from pan. Otherwise they will fall apart. Store in an airtight container for a few days or refrigerate if keeping longer. Believe me, they won't hang around long enough to go into the fridge ! ;)
