Time 1h30m

Yield 12 cake pops

Number Of Ingredients 15

1 stick (4 ounces) unsalted butter, cubed, plus more for greasing the pan
1 1/4 cups molasses
2/3 cup packed brown sugar
1 1/2 teaspoons baking soda
2 large eggs
2 1/2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon fine salt
2 sticks (8 ounces) unsalted butter, softened
8 ounces confectioners' sugar
2 lemons, zested and juiced
12.5 ounces chocolate chips

Steps:

  • For the gingerbread cake: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch pan with butter.
  • In a pot, combine the molasses, butter, brown sugar, baking soda and 1 cup water. Warm over medium heat until the butter is melted. Remove the pot from the heat and stir in the eggs.
  • In a medium mixing bowl, sift together the flour, baking powder, ginger, cinnamon, allspice and salt. Pour the wet ingredients over the dry ingredients and fold until just combined. Do not overmix.
  • Pour the batter evenly into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 15 minutes. Let cool completely.
  • For the lemon buttercream: Put the butter, confectioners' sugar and lemon zest and juice in the bowl of a stand mixer and cream until light, fluffy and lighter in color.
  • Put the chocolate chips in a microwave-safe bowl and microwave in 15-second intervals, stirring in between, until melted.
  • Crumble the cake, add the buttercream and mix until well combined. Form the mixture into balls and place a lollipop stick in the center of each ball. Dip in the melted chocolate and garnish as desired.

Adapted from a Gourmet recipe, this spicy gingerbread originated from the Gramercy Tavern. It's excellent warm, and even better after one day. If you like a deep, spicy gingerbread, you might try this one!

BOLD AND SPICY GINGERBREAD WITH A KICK

Bold and Spicy Gingerbread With a Kick image

Found this recipe in Cook's Illustrated Holiday Baking Book and I LOVE spicy gingerbread so this is going to be the center piece of my Holiday table. It states that Stout beer and hefty dose of spices, including black pepper, invest this cake with a complex, robust flavor. 4 teaspoons of fresh grated ginger adds an unmistakable element that dried spices can't muster. As for the glaze, ginger-ale lends a robust flavor but an equal amount of orange or lemon juice can be substitued for it.

MOIST, TENDER SPICE CAKE: GINGERBREAD VARIATION

Moist, Tender Spice Cake: Gingerbread Variation image

This is a substantial yet tender spice cake that's flavorful enough to serve unadorned. For my gingerbread variation, consider bringing along a jar of lemon curd.

Yield 16

Number Of Ingredients 14

2 ½ cups bleached all-purpose flour
¼ cup cornstarch
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 tablespoon ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground allspice
1 cup milk
3 large eggs
2 teaspoons vanilla extract
1 cup unsalted butter, softened until easily spreadable
1 cup dark brown sugar
1 cup molasses

Steps:

  • Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs, molasses and vanilla extract in a 2-cup measuring cup.
  • Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
  • Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

Tips:

  • Use fresh ginger. Fresh ginger has a more浓郁flavor than ground ginger, and it will give your cake pops a more authentic gingerbread taste.
  • Don't overmix the batter. Overmixing the batter will make the cake pops tough. Mix just until the ingredients are combined.
  • Chill the batter before baking. Chilling the batter before baking will help the cake pops hold their shape better.
  • Bake the cake pops at a low temperature. Baking the cake pops at a low temperature will help prevent them from drying out.
  • Let the cake pops cool completely before dipping them in chocolate. If the cake pops are still warm, the chocolate will melt and run off.
  • Use a variety of toppings. You can top your cake pops with anything from sprinkles to chopped nuts to candy.

Conclusion:

Gingerbread cake pops are a delicious and festive treat that are perfect for any occasion. They're easy to make and can be customized to your liking. So next time you're looking for a sweet and spicy treat, give gingerbread cake pops a try!
