1 stick butter (4 ounces), plus more for greasing pan
1/2 cup flour, plus more for pan
2 eggs
1 cup sugar
1 vanilla bean
1 1/4 pounds (3 to 4 small to medium) Granny Smith apples
2 teaspoons baking powder
1/2 cup milk at room temperature
Powdered sugar

Steps:

  • Heat oven to 375 degrees. Line 8-inch square pan with foil, then smear with thick layer of butter. Dust with flour; turn pan over and tap lightly to remove excess flour.
  • Melt butter in small saucepan. Set aside. Beat together eggs and half the sugar in a bowl. Continue to beat while slowly adding remaining sugar until thick; it should form a ribbon when dropped from a spoon.
  • Split vanilla bean in two lengthwise. Scrape seeds into egg-sugar batter and add pod to melted butter.

1 1/2 teaspoons vanilla
2 eggs
3 cups cake flour (or you can use 2 3/4 cups all-purpose flour)
2 1/2 teaspoons baking powder
1 teaspoon salt
1 1/4 cups milk
2 cups sugar
1/2 cup shortening
3 ounces unsweetened chocolate
2/3 cup milk
1/2 teaspoon salt
2 teaspoons vanilla

Steps:

  • Heat oven to 350 degrees. Grease bottom and sides of rectangular pan, 13 x 9 x 2 inches, or 2 round pans, 9 x 1 1/2 inches; lightly flour.
  • Beat sugar, butter/margarine, vanilla and eggs in large bowl with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 5 minutes, scraping bowl occasionally. Beat in flour, baking powder and salt alternatively with milk on low speed. Pour into pan(s).
  • Bake for 45 to 50 minutes if using the rectangular pan, 30 to 35 minutes if using the round pans, or until toothpick inserted in center comes out clean. Cool rectangular pan on wire rack. Cool round pans 10 minutes; remove to wire rack. Cool completely.
  • TO MAKE THE FROSTING: Mix all ingredients except vanilla in 2 1/2 quart saucepan. Heat to rapid boil, stirring occasionally. Boil 1 minute without stirring. Place saucepan in bowl of ice and water. Beat until frosting is smooth and of spreading consistency. Stir in vanilla.

1 - box yellow pillsbury cake mix, butter recipe, made according to package directions.
1 - can of apple pie filling, (dice the apples in the filling)
1/2 - cup finely chopped walnuts

- rum icing recipe
2 - tablespoons butter
2 - ounces cream cheese
1/2 - cup powdered sugar
1/2 to 1 - teaspoon rum extract

Steps:

  • Cook's Tip: I found that in my oven, it took about 50 minutes for the cake to get done. I tented it with foil to slow the browning. Check with a tooth pick in the middle and if it comes clean, it is done. Cake will pull away from the sides of the pan.
  • PREPARE THE CAKE: In a large mixing bowl, place the cake mix and the ingredients according to the directions on the box, add the walnuts. Grease and flour a 10 inch bundt pan. Pour the batter in the pan. Dice the apples in the pie filling into small pieces, and spoon the filling evenly over the batter. Don't push it down.
  • BAKE THE CAKE: Place the cake in the oven and bake according to the package directions. Note that it may take more time than indicated because of the addition of the pie filling. Use the toothpick test to check if it is done. Cool the cake 15 minutes, make sure it is loose, and then turn over on a foil lined tray. Cool completely before icing. Enjoy!

If it is too thick, add a half teaspoon of water and mix well. Spoon the mixture into a small plastic ziplock bag, close it and get the air out, and then snip the corner of the bag and ice the cake.
