BISQUICK PINEAPPLE UPSIDE DOWN CAKE

Steps:
- Heat oven to 350°F. In 9-inch round pan or 8-inch square pan, melt butter in oven. Sprinkle brown sugar evenly over melted butter. Arrange pineapple slices in single layer over sugar mixture. Sprinkle with pecans. Place cherry in center of each pineapple slice (cherries with stems can be added after baking).
- In large bowl, beat remaining ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally. Pour batter over pineapple and cherries.
- Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake a few minutes so brown sugar mixture can drizzle over cake; remove pan. Cool at least 10 minutes before serving. Store loosely covered.

- Heat oven to 350°F. In 12-cup fluted tube (bundt) cake pan, pour melted butter. Sprinkle brown sugar evenly over butter. Line bottom of pan with pineapple slices. Place 1 cherry to center of each pineapple slice.
- In large bowl, beat cake mix, pineapple juice, oil and eggs with electric mixer on low speed until moistened; beat 2 minutes on high speed. Pour into pan over fruit.
- Bake 40 to 45 minutes or until cake is golden brown and springs back when touch lightly. Cool cake in pan 10 to 15 minutes. Plate heatproof plate upside down over pan; turn plate and pan over. Remove pan. Serve warm or cool.

BONNIE'S PINEAPPLE SIDE DISH OR DESSERT
This dish will kick your dinner up a notch! Serve with Chicken or Ham as a hot side dish, or chill it and serve as a dessert with whipped cream. It is good either way. It is made from most items you have in your pantry, and definitely company worthy. Enjoy!

- Pre-heat oven to 350 degrees.
- Drain the pineapple. Reserve 1 cup of pineapple juice. Mix the pineapple juice with the sugar, flour and the eggs until smooth.
- Spray a round 2 quart pyrex baking dish with Pam kitchen spray. Spoon the mixture into the pyrex dish. Cut the buttered bread into croutons (remove the crusts). Spread them evenly on top of the mixture.
- Bake uncovered for 50 to 60 minutes until set and browned. If not brown enough, use the broiler for a few minutes.
- This is an excellent hot side dish for pork or poultry or serve cold as a dessert with a dollop of whipped cream.
