Yield 1 serving

Number Of Ingredients 6

1 head green cabbage (you won't use it all!), carefully cored with a knife
1 frozen meatless hamburger-style patty with about 100 calories
1 slice onion
2 slices tomato
Ketchup, optional, as a topping
Mustard, optional, as a topping

Steps:

  • Serving suggestion: dill pickle spears
  • Place the head of cabbage in a large microwave-safe bowl, and microwave for about 4 minutes, until the outer leaves begin to loosen.
  • Once cool enough to handle, remove the cabbage from the bowl. Gently remove 2 whole outer leaves from the cabbage, and place them back in the bowl. (Reserve the rest of the cabbage for another use.)
  • Add 2 tablespoons of water to the bowl with the cabbage leaves. Cover and microwave for about 2 minutes, until leaves are very soft.
  • Meanwhile, spray a skillet with nonstick spray and bring to medium heat on the stove. Add the burger patty and onion slice and cook for about 4 minutes per side, until cooked through.

EASY CABBAGE POCKETS

Easy Cabbage Pockets image

I grew up in a town that was filled with Wolgadeutsche, or Germans from Russia. Family members and friends of the family made these cabbage pockets, sometimes called Krautbrot or Bierocks. This is a perfect food for lunches, as it is self contained and freezes well. I have changed it slightly to make it easier to make and enjoy. I love mine served hot, with ketchup for dipping!

Time 1h

Yield 24

Number Of Ingredients 6

cooking spray
1 pound ground beef
1 large onion, chopped
1 head cabbage, shredded
salt and ground black pepper to taste
1 (2 pound) package frozen dinner rolls, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray muffin cups with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir onion into ground beef and saute until translucent, about 5 minutes. Add cabbage and reduce heat to low; cook and stir until cabbage has wilted slightly, about 5 minutes more. Pour mixture into colander to strain excess liquid and cool slightly.
  • Spray a work surface with cooking spray. Flatten rolls into disc shape with a rolling pin; spoon 1 to 2 tablespoons of beef and cabbage filling onto each disc. Fold discs in half around filling, pressing edges together to seal. Gently place in muffin cups, spray tops with cooking spray, and poke with toothpick to allow venting.
  • Cook cabbage pockets in preheated oven until dough is browned, 25 to 45 minutes.

Tips:

  • Choose the Right Cabbage: Select a firm, dense cabbage head with tightly packed leaves. Look for one that is free of bruises or blemishes.
  • Prepare the Cabbage Properly: Remove the outer leaves of the cabbage and cut it into quarters. Remove the core and thinly slice the cabbage.
  • Use Fresh Vegetables: Always use fresh, crisp vegetables for the best flavor and texture in your cabbage rolls.
  • Cook the Rice Perfectly: Rinse the rice well before cooking to remove any excess starch. Cook the rice according to package instructions or until it is tender but still has a slight bite.
  • Season the Meat Mixture Generously: Don't be afraid to season the meat mixture liberally with salt, pepper, and other herbs and spices. This will add flavor to the cabbage rolls.
  • Roll the Cabbage Rolls Tightly: Make sure to roll the cabbage rolls tightly so that they hold their shape during cooking.
  • Cook the Cabbage Rolls Gently: Simmer the cabbage rolls in a flavorful sauce over low heat until they are tender and cooked through. This will prevent them from becoming tough or dry.
