BOOZY CHERRY WALNUT TART
Cherries in winter may sound counterintuitive, but like frozen peas and corn, frozen cherries are, well, pretty good. Baked on a bed of easy press-in crust, the boozy cherries sink into the almost-frangipane mixture which soaks up much of the juiciness cherries are known for. The trick to a nice, crunchy bottom tart shell is baking longer than you think, so make sure you give it the full time recommended.

Steps:
- Make the crust: Mix flour, sugar and salt in a medium bowl. Pour butter over the dry ingredients and, using your hands, mix together until you've got a Play-Doh-like texture.
- Press crust into a 9-inch tart pan with a removable bottom. (Alternatively, use a 9-inch cake pan lined with parchment; the crust can go about 3/4 inch up the sides of the pan.) Set aside.
- Make the filling: Heat oven to 350 degrees. Toast walnuts on a rimmed baking sheet until well browned and fragrant, 5 to 8 minutes; remove from heat and let cool.
- Pulse walnuts, butter, 1/4 cup/50 grams sugar, 2 tablespoons flour and a pinch of kosher salt in a food processor until finely ground. Add the egg and pulse just to blend. Spread walnut mixture on the bottom of the prepared crust.
- Toss cherries with bourbon, orange zest, remaining 1/3 cup/65 grams sugar, remaining 3 tablespoons flour and a pinch of salt. Scatter cherries over the walnut mixture and sprinkle with a bit more sugar to finish.
- Place tart on a rimmed baking sheet lined with foil and bake until the crust is golden brown at the edges and the cherries are thick and saucy, 55 to 65 minutes. Let cool at least 30 minutes before removing from the pan and slicing. (If you can wait an hour to let the juices fully settle, even better.)

Steps:
- Whisk the sugar, rum, vanilla, orange zest and 1/4 teaspoon salt in a large bowl until the sugar dissolves. Add the cherries and cornstarch and toss; set aside until juicy, about 30 minutes. Line a baking sheet with foil and coat with cooking spray. Place six 5-to-6-inch ceramic tart dishes on the prepared pan. Add 3/4 cup cherries to each dish using a slotted spoon; top each with 1 tablespoon butter and 2 teaspoons chocolate. Transfer the remaining cherry mixture to a saucepan; add 1/2 cup water and simmer over medium heat, stirring occasionally, until thickened, 5 to 7 minutes. Divide among the dishes; cool completely.
- Dust a surface with flour. Using a paring knife, cut out 6 circles from the piecrust, 1/2 inch bigger than the tart dishes (use the dishes as a guide). Place on another baking sheet; chill until ready to bake. Position a rack in the lower third of the oven and preheat to 375 degrees F. Top each dish with a piece of dough, pressing the edge against the dish to seal; pierce several times with a knife. Bake 45 minutes, then brush each pie with heavy cream and sprinkle with sugar. Continue baking until golden, about 15 more minutes. Serve with ice cream.

Meet the Cook: The first time my husband tried this, he said there ought to be a law against anything tasting so good! I've served it at picnics and family occasions...and even once at a bridal shower. It's fine either as a dessert or for breakfast. Yield Makes about 1 cup cherries and 2 cups syrup
Number Of Ingredients 4
Steps:
- Combine sugar and cherry juice in a small saucepan. Add salt and bring to a boil, stirring to dissolve the sugar. Simmer 1 minute. Add cherries and simmer 1 minute. Remove from heat and stir in Kirsch. Let cool completely before storing in an airtight container. Chill for up to 1 week.
Tips:
- Use fresh cherries. Fresh cherries have a more intense flavor than frozen or canned cherries. If you can't find fresh cherries, you can use frozen cherries that have been thawed and drained.
- Pit the cherries. Use a cherry pitter to remove the pits from the cherries. If you don't have a cherry pitter, you can use a paring knife to carefully cut around the pits.
- Toast the walnuts. Toasting the walnuts will bring out their flavor and make them more crunchy. To toast the walnuts, spread them on a baking sheet and bake them in a 350 degree Fahrenheit oven for 5-7 minutes, or until they are golden brown.
- Use a good quality chocolate. The chocolate is one of the main ingredients in this tart, so it's important to use a good quality chocolate that you enjoy the taste of.
- Don't overbake the tart. The tart is done baking when the crust is golden brown and the filling is set. If you overbake the tart, the crust will be dry and the filling will be overcooked.
Conclusion:
This boozy cherry walnut tart is a delicious and decadent dessert that is perfect for any occasion. The tart crust is flaky and buttery, the filling is rich and creamy, and the cherries and walnuts add a touch of sweetness and crunch. This tart is sure to be a hit with your friends and family!
