BOURSIN STUFFED EGGS
I love Boursin and I love deviled eggs... so I wondered what would happen if I combined the two. Answer: This! It's delicious and very creamy. You can buy Boursin or use one of the recipes on Recipezaar to make your own. I stuffed the eggs (thus the name) pretty full with the filling, so if you like less filling, you might want to have some extra eggs on hand to stuff :)

Steps:
- Prepare grill.
- Finely chop onion. In a bowl gently combine onion and turkey (do not overmix) and form into four 1/2-inch-thick patties. Center 1 tablespoon Boursin on each of 2 patties and top with remaining 2 patties, pressing edges together to seal. Season burgers with salt and pepper and grill on a lightly oiled rack set 5 to 6 inches over glowing coals 6 to 8 minutes on each side, or until just cooked through.
- While burgers are grilling, brush bread with oil and toast on grill.
- Serve burgers on bread with tomato and watercress.
Tips:
- To make the perfect hard-boiled egg, place the eggs in a single layer in a saucepan and cover them with cold water. Bring the water to a boil over high heat, then cover the pan and remove it from the heat. Let the eggs stand in the hot water for 10-12 minutes, depending on how hard you want them to be. Immediately transfer the eggs to an ice bath to stop the cooking process.
- For a fun and festive presentation, cut the eggs in half lengthwise instead of crosswise. This will create a boat-shaped egg that can be filled with the Boursin mixture.
- If you don't have fresh chives on hand, you can use dried chives instead. Use about 1/4 teaspoon of dried chives for every tablespoon of fresh chives called for in the recipe.
- Serve the eggs warm or cold. If you're serving them cold, chill them for at least 30 minutes before serving.
Conclusion:
Boursin-stuffed eggs are a delicious and easy-to-make appetizer that is perfect for any occasion. They're also a great way to use up leftover hard-boiled eggs. With just a few simple ingredients, you can create a dish that is sure to impress your guests. So next time you're looking for a quick and easy appetizer, give this recipe a try. You won't be disappointed!
