BUTTER, FRESH SAGE, AND WALNUT SAUCE

Butter, Fresh Sage, and Walnut Sauce image

Yield for 1 pound of pasta

Number Of Ingredients 5

8 tablespoons (1 stick) butter, or more to taste!
6 fresh sage leaves
1 cup chopped walnuts, 1/8- to-1/4-inch bits
Hot water from pasta-cooking pot
1 cup freshly grated Parmigiano-Reggiano or Grana Padano

Steps:

  • Melt the butter over medium-high heat in the skillet, and scatter the sage leaves around the pan.
  • When the butter begins to sizzle, drop the chopped walnuts in a hot spot. Toast them, stirring them in the butter for a minute or so, until they start to turn light brown.
  • Ladle in 1 cup of pasta-cooking water. Cook at an active simmer for about 3 minutes, to develop flavor and thicken the sauce.
  • Finish sauce with cooked pasta, tossing and cooking together over low heat (for details, see page 105). Off the heat, toss pasta with the freshly grated cheese just before serving.
  • My favorite-fresh Buckwheat Pasta with Walnuts (page 173), cut in lacce (shoestrings). Also, whole-wheat, flaxseed, cornmeal, and barley pasta. Yes, and dry spaghetti is good when no fresh pasta is around.

Tips:

  • Use Fresh, High-Quality Ingredients: Prioritize the use of fresh and flavorful ingredients to elevate the dish. Fresh herbs, such as sage, wilt in butter, releasing their aromatic flavors.
  • Toast the Walnuts: Toasting the walnuts enhances their flavor and adds a delightful crunch to the pasta. Ensure they are evenly toasted but not burnt.
  • Don't Overcook the Pasta: Cook the pasta according to the package instructions, or slightly undercook it to achieve an "al dente" texture. Overcooked pasta becomes mushy and loses its desired consistency.
  • Save Some Pasta Water: Reserve a cup of pasta water before draining. This starchy water helps to create a creamy and flavorful sauce when combined with the butter and cheese.
  • Grate the Parmesan Cheese Freshly: Freshly grated Parmesan cheese melts better and provides a superior taste compared to pre-grated cheese.
  • Conclusion:

Bow-ties with walnuts, butter, and sage is a delightful and versatile pasta dish that showcases simple yet flavorful ingredients. Its creamy sauce, aromatic herbs, and toasted walnuts create a harmonious blend of textures and flavors. This recipe not only satiates your taste buds but also impresses guests with its elegant presentation. Enjoy this culinary delight as a main course or a satisfying side dish.

Remember, the key to a successful dish lies in the quality of ingredients and careful execution. Take the time to select fresh ingredients, toast the walnuts to perfection, and cook the pasta al dente. Experiment with different types of pasta, herbs, and cheeses to create your unique variation of this classic recipe. Impress your loved ones with your culinary skills and indulge in the comforting flavors of bow-ties with walnuts, butter, and sage.
