CAMPFIRE FOIL PACKS

Campfire Foil Packs image

These are easy to make for camping, my husband loves them! We prepare them at home and then leave them in the cooler until we are ready to cook. You can use any combination of meat and vegetables that you like. Do not try to use less olive oil or foil or your dinner will burn. Be careful when opening foil as steam will have formed inside and can burn you.

Yield Serves 4

Number Of Ingredients 6

1 (3-pound) rotisserie chicken, skin removed, meat shredded into bite-sized pieces (3 1/2 cups chicken)
5 ounces coarsely grated Monterey Jack cheese
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 (7-inch) flour tortillas
Hot sauce (optional, for serving)

Steps:

  • Cut 8 (12x16") pieces of heavy-duty foil. Layer 2 pieces of foil on top of each other to create 4 stacks.
  • Place a flour tortilla in the center of each foil stack. Dividing evenly, top one half of each tortilla with chicken and cheese and season with salt and pepper. Fold tortillas in half, then bring edges of foil together to enclose the quesadillas and crimp edges to seal.
  • Prepare a campfire or grill for medium, indirect heat, preferably with hardwood or hardwood charcoal. Let coals burn until covered with ash and glowing red with no black remaining.
  • Place foil packs side by side directly onto hot coals or grill and cook, rotating with tongs occasionally, about 5 minutes. Carefully remove 1 packet from heat and check if cheese is melted. If necessary, return pack to coals and continue to cook, 5-10 minutes more. Serve with hot sauce, if desired.

Tips:

  • Choose hearty, flavorful ingredients: Meats like chicken, beef, or fish pair well with vegetables like potatoes, carrots, and onions. Bold flavors like garlic, herbs, and spices add depth to the dish.
  • Prep your ingredients beforehand: Cut vegetables into uniform sizes for even cooking and sear meats if needed. Marinating meats or vegetables enhances their flavor.
  • Use heavy-duty aluminum foil: Regular foil can tear during cooking, so opt for heavy-duty foil for durability. Double-layering the foil adds an extra layer of protection.
  • Seal the foil packets tightly: Proper sealing prevents leaks and ensures even cooking. Fold the edges of the foil over several times, pressing firmly to eliminate gaps.
  • Cook over medium-low heat: High heat can burn the food or cause the foil to melt. Medium-low heat allows the food to cook thoroughly without burning.
  • Check for doneness before serving: Use a meat thermometer to ensure meats have reached a safe internal temperature. Vegetables should be tender when pierced with a fork.

Conclusion:

Cooking with foil dinners allows for a convenient and flavorful meal preparation method that retains nutrients and moisture. By following these tips, you can create delicious and satisfying foil dinners that are perfect for camping, picnics, or easy weeknight meals. Experiment with different ingredients and flavor combinations to suit your taste preferences and dietary needs. With a little planning and preparation, foil dinners offer a hassle-free and enjoyable culinary experience.
