Steps:
- Preheat oven to 325°F
- Place vinegar, water, butter and sugar into a Dutch oven.
- Place over medium heat and cook for about 5 minutes.
- When butter is melted and sugar has dissolved, remove from heat.
- Add chopped red cabbage. Stir all together. Cover with lid.
- Place Dutch oven in preheated oven. Braise in the oven for 2 hours, stirring every 1/2 hour or so. If the liquid completely evaporates, add a little extra water.
- Remove from oven and spoon cabbage onto a serving platter or individual serving plates.
- Top with 8 - 12 dollops (or 1 or 2 dollops per serving, if doing individual servings) goat cheese (see photo above).
- Serve hot.
Tips:
- Select the right cabbage: Choose a firm, heavy head of cabbage with tightly packed leaves. Avoid heads with brown spots or wilted leaves.
- Use good quality goat cheese: Fresh, creamy goat cheese will give the dish the best flavor. Avoid pre-packaged or processed goat cheese.
- Don't overcook the cabbage: Cabbage should be tender but still slightly crunchy. Overcooking will make it mushy.
- Season to taste: Add salt, pepper, and other seasonings to taste. You may also want to add a pinch of red pepper flakes for a little spicy kick.
- Serve immediately: Braised cabbage is best served hot. Leftovers can be stored in the refrigerator for up to 3 days.
