Time 50m

Number Of Ingredients 16

8 lamb loin chops, each about 1 1/2 inch in thickness
Kosher salt
1 Acorn Squash (if available, or a similar squash)
1 head garlic (about 12 to 14 cloves), peeled and minced
1/3 cup Private Reserve extra virgin olive oil, more if needed
2 1/2 tsp ground allspice, divided
2 tsp black pepper, divided
1 1/2 tsp sweet Spanish paprika, divided
1 tsp ground nutmeg, divided
1 large red onion, peeled, halved then thickly sliced
1 large sweet potato, peeled and cubed
2 carrots, peeled, cut into large pieces
3 tbsp white wine vinegar
honey
Fresh parsley for garnish
1 Tahini Sauce Recipe (optional)

Steps:

  • Season lamb chops with Kosher salt on both sides. Set aside at room temperature while you prepare the remaining ingredients.
  • Preheat oven to 400 degrees F.
  • Microwave the acorn squash for 1 to 2 minutes (this helps soften it a bit for cutting.) Handle carefully. When cool enough to handle, place acorn squash on a cutting board. Cut stem off, and trim both ends about 1/4 inch. Cut acorn squash in half crosswise, and scoop out the seeds. Now, take each half and cut into 1/2-inch thick rings.
  • In a large bowl, combine minced garlic, extra virgin olive oil, 1 tsp allspice, 1 tsp black pepper, 3/4 tsp paprika, and 1/2 tsp ground nutmeg. Mix well. (leave rest of spices for later.)
  • Add the vegetables (sliced acorn squash, onions, sweet potatoes, and carrots) to the marinade bowl with the garlic marinade (you may need to do this in stages.) Give them a quick toss, then transfer vegetables to a large sheet pan. Season with kosher salt.
  • To the marinade bowl, add more extra virgin olive oil. Add white wine vinegar, and the remaining spices. Mix well. Add lamb chops in and toss to coat. Set aside to marinate.
  • Place vegetables in heated oven and bake for 15 minutes or so.
  • When 15 minutes have passed, remove the vegetables from oven and set near you (leave oven on.) Heat a little bit of extra virgin olive oil in a large skillet over medium-high heat until shimmering but not smoking. Add lamb and brown on both sides (about 3 minutes per side.) Transfer lamb to the vegetable pan, and return to heated oven to bake for 10 minutes (lamb will be medium-rare to medium. Bake a little longer for medium-well.)
  • When ready, remove pan from oven and immediately drizzle honey all over the lamb and vegetables. Garnish with parsley.
  • Serve with a side of tahini sauce, if you like.

BRAISED LAMB

Braised Lamb image

Provided by Food Network

Yield 4 Servings

Number Of Ingredients 12

4 3/4-inch-thick shoulder lamb chops (3 to 4 lbs)
5 large garlic cloves, smashed
2 Tbsps mixed chopped fresh herbs (such as oregano, marjoram and thyme) plus 4 whole sprigs thyme
Salt and pepper
1/4 cup flour, for dusting
3 Tbsps olive oil
4 large onions, sliced thick
4 large tomatoes, sliced thick
1 cup dry white wine
2 bay leaves
1 bunch parsley, stems removed and reserved separately, leaves finely chopped
3 large boiling potatoes, peeled and sliced thick

Steps:

  • Preheat oven to 275F.
  • Rub both sides of lamb shoulder chops with 1 to 2 garlic cloves, as needed. Rub with chopped herbs and season with salt and pepper. Dust both sides of chops with flour. In a large (10-inch) cast iron skillet, heat oil over high heat. When nearly smoking, add 2 lamb chops and sear, 4 minutes each side, until well-browned. Remove and repeat with remaining chops. Discard fat that has accumulated in pan.
  • In skillet layer onions, half of tomato slices and lamb chops. Top with remaining tomato slices and pour wine and 1/2 cup water over. Bring to a boil over medium-high heat. Add remaining 4 garlic cloves, bay leaves, thyme sprigs and parsley stems. Cover pan loosely with aluminum foil and roast for 3 hours.
  • Cover top with potato slices, pushing them into liquid so they are completely submerged. Cover pan, return to oven and cook 30 minutes or until potatoes are tender. Using a large spoon, remove excess liquid and any fat from stew to a small saucepan. Bring liquid to a boil over high heat and boil rapidly until thickened, 10 to 15 minutes. Before serving, broil lamb under a preheated broiler, 5 minutes or until potatoes are well-browned. Sprinkle with chopped parsley and serve with sauce.

Tips:

  • Choose high-quality lamb chops: Opt for chops that are evenly thick and have a good amount of marbling, as this will help them stay tender and juicy during braising.
  • Season the chops generously: Season the chops liberally with salt, pepper, and any other desired spices or herbs before braising. This will help to enhance their flavor and prevent them from tasting bland.
  • Use a flavorful braising liquid: The braising liquid is essential for adding flavor and moisture to the chops. Use a combination of liquids such as broth, wine, and herbs to create a flavorful and aromatic braising liquid.
  • Braise the chops low and slow: Braising is a low and slow cooking method that allows the chops to become tender and fall off the bone. Cook the chops for at least 2 hours, or until they reach an internal temperature of 145 degrees Fahrenheit (63 degrees Celsius).
  • Serve the chops immediately: Once the chops are cooked, serve them immediately with the braising liquid and any desired sides. This will ensure that the chops are at their most tender and flavorful.

Conclusion:

Braised lamb chops are a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. By following these tips, you can create tender, juicy, and flavorful braised lamb chops that your family and friends will love. Experiment with different braising liquids and seasonings to find your favorite combination and enjoy this classic dish.
