BREAD MACHINE WEST AFRICAN BANANA FRITTERS
This is based on a recipe from Madge Rosenberg's cookbook, The Best Bread Machine Cookbook Ever - Ethnic Breads. She says, "These fritters, similar to what we know as beignets, make inexpensive party food rich in natural fruit flavors. Children will enjoy munching these crispies with milk, but the big kids will eat their way through an endless supply with coffee or beer." My kind of fritters!

- For each fritter, ladle about 1/4 cup of the banana batter into the hot oil. Deep-fry 2 or 3 fritters at a time, leaving enough space between them so that they can spread into 3 or 4-inch rounds or oblongs. Turning them once or twice with a slotted spoon, fry for about 3 minutes or until the fritters are a rich golden color on all sides. as they brown, transfer them to paper towels to drain.
- While the fritters are still warm sprinkle them lightly with powdered sugar and serve at once.

Steps:
- Place ingredients in the pan of the bread machine.
- Select the Dough setting, and press Start. Mix the bread for 3 to 5 minutes until the bananas are mashed and all ingredients are thoroughly combined. Smooth out the top of the loaf with the rubber spatula.
- Select the Bake setting, and press Start. The Bake cycle time may vary with machines, but should be about 50 minutes. To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is batter on the toothpick, reset the machine on Bake and continue to bake an additional 10 to 15 minutes. Test again with the toothpick to ensure the bread is completely baked. Remove the pan from the machine, but allow the bread to remain in the pan for 10 minutes. FRIED BANANA FRITTERS
This is an old traditional snack in most of Malay families, especially when there are too many ripe bananas at the back yard. We used to eat this for breakfast or evening tea. This is a trial an error recipe. You have to keep on trying to do it until you get the right texture and flavour. Once you master it you can do it with your eyes closed. But, it is worth trying since it is a really nice and tasty snack. The ingredients below are flexible. It's up to individual taste. If you like more bananas you have to add less flour and the fritters will be a softer. If you prefer the fritters to be more rounded and spongy use more flour. Either way the batter must look like cake batter before frying. I prefer more flour.

Tips:
- Choose ripe bananas: The riper the bananas, the sweeter and more flavorful your fritters will be.
- Don't overmix the batter: Overmixing will make the fritters tough. Mix just until the ingredients are combined.
- Use a generous amount of oil for frying: This will help the fritters cook evenly and prevent them from sticking to the pan.
- Don't overcrowd the pan: Frying too many fritters at once will lower the oil temperature and make them soggy.
- Serve warm: Banana fritters are best served warm, when they are crispy on the outside and soft and fluffy on the inside.
Conclusion:
West African banana fritters are a delicious and easy-to-make treat that can be enjoyed for breakfast, lunch, or dinner. They are also a great way to use up ripe bananas. With a few simple ingredients and a little bit of time, you can make these delicious fritters at home. So next time you have some ripe bananas on hand, give this recipe a try.
