1 cup sugar
2 eggs
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon

2 apples - peeled, cored and chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
  • In a bowl, mix the butter and sugar until smooth and creamy. Beat in the eggs.

2 eggs
1 scant cup buttermilk
1 large apple, grated (about 1 cup)
1/2 cup melted butter
1 teaspoon vanilla extract
1 1/3 cup plain, unsweetened bran cereal
1 cup unbleached all purpose flour
1/2 cup oat bran or coarsely pulsed oats, plus more for topping
1/2 cup natural cane sugar
1/3 cup muscavado sugar (or brown sugar), plus more for topping
1/2 cup chopped pecans
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/4 teaspoon fresh ground nutmeg
Salted butter, room temperature, for serving

Steps:

  • Preheat the oven to 375°F. Grease a 9x5 loaf pan or line it with parchment paper.
  • Into a large mixing bowl, combine the eggs and buttermilk and whisk well to combine. Add the grated apple, melted butter and vanilla and stir to mix. Add the bran cereal and let it sit for 5 minutes to absorb liquid.
  • While you're waiting, in another bowl, combine the dry ingredients. Combine the all purpose flour, oat bran, cane sugar, muscavado, pecans, baking soda, baking powder, sea salt, cinnamon and nutmeg. Stir to mix. Add the wet ingredients in with the dry and stir just to combine, do not overmix.
  • Pour the batter into the prepared pan, it should come up no more than 3/4 way up the pan. Sprinkle the top of the loaf with a handful of oat bran and brown or turbinado sugar. Bake on the middle rack for 40-45 minutes or until a toothpick in the center comes out clean. Allow it to cool completely before removing it from the pan.
  • Slice with a serrated knife and serve with butter on the side.
  • Loaf can be kept covered at room temperature for 3 days or for 5 days in the fridge.

3/4 cup unbleached flour
1 1/4 teaspoons ground cinnamon
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 cup dried currant
1/2 cup fresh orange juice
1/2 cup buttermilk
3 tablespoons molasses
3 egg whites
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 large apple, peeled and diced into quarter inch pieces

Steps:

  • Stir together all dry ingredients except currants; add currants, tossing to coat.
  • Whisk together wet ingredients; add diced apple.
  • Stir wet into dry ingredients until just combined.
  • Pour batter into greased 8-inch square pan and bake at 375 degrees for 35 minutes or until tests done (check halfway through baking time and cover with foil if cake is browning too quickly).

This is a fruit loaf cake, using All Bran as the main ingredient.

1 cup All Bran
1 cup Milk
1 cup Self raising flour
1/2 cup or 1 cup Soft brown sugar (depending on desired sweetness)
A standard loaf tin

Steps:

  • Grease and line your loaf tin, and preheat the oven to 170C/fan 150C/gas 5.
  • Use a cup to measure the ingredients (I use my small measuring jug featured in the photograph.)
  • Pour the All bran and milk into a bowl. Leave the All Bran to soak up the milk (about 5-10 mins.)
  • Add the self raising flour and sugar to your mixture and stir.
  • Cut up your dried fruit (if using prunes and apricots) and dust with some of the self raising flour. Add the fruit to your mixture and stir.
  • The mixture should be thick and gloopy, if it isn't you may wish to add a bit more milk. Transfer the mixture to your loaf tin and put in the oven for 1 hr -1 hr 30 mins. Check on the loaf after 1 hr by putting a knife through the middle, if it comes out clean the loaf is cooked, if not leave it in a little longer.

1 teaspoon baking soda
1/2 teaspoon salt

1/2 cup banana (ripe, mashed)
1/2 cup unsweetened applesauce
1/2 cup skim milk (soured with 1/2 teaspoon vinegar)
1 cup Kellogg's all-bran cereal (I always use the Extra Fiber kind)
1/2 cup margarine (I use butter, softened)
3/4 cup sugar
