1 pound bulk Italian sausage
5 cups frozen shredded hash brown potatoes
1/2 cup chopped onion
1/2 cup chopped green pepper
1/4 to 1/2 teaspoon salt
Pepper to taste
1/2 cup sliced mushrooms
4 large eggs, lightly beaten
1 medium tomato, thinly sliced
1 cup shredded cheddar cheese
Sour cream and salsa, optional

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink. Add the potatoes, onion, green pepper, salt and pepper. 1 cup part-skim ricotta cheese

1 cup shredded part-skim mozzarella cheese
¼ teaspoon freshly ground black pepper

1 (6 ounce) package fresh baby spinach
