BEER GLAZED BRATS AND SAUERKRAUT

Beer Glazed Brats and Sauerkraut image

I came up with this recipe, because simply simmering sausages in beer and onions tasted weak. I was looking for a more intense beer flavor with a little bite, and this is it. A very satisfying dish if you crave German flavor that's Americanized. We love this dish served on potato rolls with spicy hot German mustard, Swiss cheese, and ice cold beer on the side.

Time 50m

Yield 6

Number Of Ingredients 10

⅛ teaspoon celery seeds
⅛ teaspoon caraway seeds
1 pound fresh bratwurst sausages
1 (12 fluid ounce) can or bottle lager beer
1 tablespoon light brown sugar
2 teaspoons dry mustard powder
1 teaspoon onion powder
⅛ teaspoon ground black pepper
⅛ teaspoon dried dill weed
1 pound sauerkraut (preferably barrel-aged), drained

Ask a Wisconsin purist -- tradition demands that these sausages be served on a toasted hard roll (not a hot dog bun), with butter, spicy mustard (not ketchup), sweet pickles (not lettuce), and sauerkraut.

Tips:

  • Choose high-quality bratwurst for the best flavor. Look for bratwurst made with fresh, coarsely ground pork and flavorful spices.
  • Use a cast-iron skillet or griddle for cooking the bratwurst. This will give the bratwurst a nice sear and help to prevent it from sticking.
  • Cook the bratwurst over medium heat so that it cooks evenly throughout. Bratwurst should be cooked to an internal temperature of 160°F (71°C).
  • Slice the bratwurst into thin strips before serving. This will make it easier to eat and will help the bratwurst to absorb the flavors of the other ingredients in the sandwich.
  • Serve the bratwurst sandwiches with your favorite toppings. Some popular toppings include sauerkraut, mustard, ketchup, and onions.
