8 slices whole wheat bread
butter, for spreading to taste
12 ounces ripe brie cheese
30 -40 large grapes
16 fresh mint leaves

Steps:

  • Butter the bread.
  • Cut the Brie into thick slices to be divided between the sandwiches.
  • Place the Brie slices on 4 slices of bread.
  • Peel, halve and seed the grapes and put on top of the Brie.
  • Chop the mint finely and sprinkle over the Brie and grapes.
  • Place the other 4 slices of bread over the top and cut each sandwich in half.

Steps:

  • Place a piece of aluminum foil under the rack of your grill and preheat it to medium-high.

Vegetable oil, for brushing
Kosher salt and freshly ground black pepper
1 large baguette, sourdough, ciabatta or Italian loaf
2 bunches purple, red or green grapes (about 1 pound)
Two (8-ounce) wheels of brie (or one 16-ounce wheel)

Steps:

  • Light a grill or preheat a grill pan over medium-high heat. Clean and oil the grill grates or grill pan.
  • Slice the baguette in half lengthwise and brush the cut sides with a little oil. Sprinkle with salt and pepper.
  • Place the grapes with their stems still attached in a medium bowl. Coat the grapes with a little oil. Season with salt and pepper.
  • Brush the brie with a little oil, as well.
  • Once the grill is heated, grill the bread until charred on both sides, 3 to 5 minutes per side. Remove and slice into pieces.
  • Add the grape bunches to the grill and cook, turning every couple of minutes, until some of them begin to burst and they turn golden in color, 8 to 10 minutes. About 5 minutes before the grapes are done, add the brie to the grill.
  • If using two 8-ounce wheels of brie, grill until you see nice grill marks, 1 to 2 minutes per side. If using one 16-ounce wheel of brie, grill until you see nice grill marks, 2 to 3 minutes per side.
  • Remove the grilled grapes and brie and arrange on a board or platter along with the grilled bread.

1 mini brie round (8 oz.)
1 cup california seedless grapes
1 teaspoon thyme, fresh minced
1/2 teaspoon rosemary, fresh minced
1 sheet puff pastry, thawed
1 egg, beaten

Steps:

  • Pre-heat oven to 400 degrees Fahrenheit.
  • Slice Brie wheel in half horizontally. Press grapes onto cut side of lower half of cheese. Sprinkle grapes with herbs. Press top of Brie onto grapes, sandwiching them in between the two halves. Set aside.
  • On lightly floured surface, roll puff pastry into a 16x10 rectangle. Cut a 6 round and an 8 round from puff pastry. Brush smaller round of puff pastry with egg. Set brie/grape sandwich onto pastry. Brush larger round of pastry with egg and place egg side down over Brie. Press out any excess air and crimp edges to seal. You can decorate top with puff pastry scraps if desired. Brush outside of the pastry with beaten egg. Place on cookie sheet and bake for 20 minutes. Tent loosely with foil and return to oven for 10-15 more minutes. Brie should be golden brown and puffy looking.
  • Remove from oven and let cool for one hour before cutting into Brie.

16 slices bread (each about 5 inches square)
4 tablespoons olive oil
2 cloves garlic, halved
6 leeks, cut into 4 inch lengths,then sliced into thirds lengthwise,and separated into strips
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup cold water
1 1/2 lbs ripe brie cheese

Steps:

  • Preheat the oven to 375*F.
  • Trim the crusts from the bread slcies and lay them on 2 baking sheets in a single layer.
  • Drizzle with 3 tbls.
  • of the olive oil.
  • Bake until crisp and golden-5 to 7 minutes.
  • Remove from the oven and rub one side of each slice with the cut side of the garlic.
  • Heat the remaining tbls.
  • of olive oil in a 12-inch skillet over medium heat.
  • Add the leeks, sugar, salt, and pepper, stir to coat, and saute until lightly browned-about 5 minutes.
  • Add the water, reduce the heat to low, cover, and simmer until soft-about 10 minutes more.
  • Set aside.
  • Spread each slice of toast on the garlic-coated side with an equal amount of brie, discarding the rind.
  • Cut each slice in half to form 2 rectangles.
  • Lay the leeks on one half and top with the other half.
  • (If desired, cut in half again to form squares.) Place on a baking sheet.
  • *Atthis point the sandwiches can be covered with plastic wrap and refrigerated for up to 8 hours.
  • Bake, uncovered, until the cheese is melted-3 to 4 minutes from room temperature, 5 to 6 minutes from the refrigerator.
  • Makes 16 sandwiches.
