BROCCOLI ALMOND CASSEROLE

Broccoli Almond Casserole image

This is a family favorite that MUST be at every kind of 'roast' something dinner. It is very rich tasting and what we all consider comfort food. I'm not sure where this originated from, just very thankful to have it. You can use 7oz cheez whiz in place of the shredded cheddar, but I don't like it as much. You can also omit the cheese entirely if you want. I once did that by accident and it tasted just fine.

ROASTED BROCCOLI WITH ALMONDS AND CARDAMOM (MALAI BROCCOLI)

Roasted Broccoli With Almonds and Cardamom (Malai Broccoli) image

This recipe comes from the British cookbook author Meera Sodha, who adapted it from a dish she tasted in Goa, India. It's a smart, simple technique that turns the broccoli crisp and creamy at the same time: charred florets with a lick of thick nutmeg-spiced sauce baked into every nook and cranny. Ms. Sodha uses a mix of cream cheese, yogurt and ground almonds. Don't be afraid to get messy and use your hands to thoroughly coat the broccoli in the sauce; it pays off later.

Tips:

  • Choose fresh broccoli: Look for broccoli with tightly closed florets and a deep green color. Avoid broccoli with yellowing or wilted florets.
  • Blanch the broccoli: Blanching the broccoli helps to preserve its color and nutrients. To blanch the broccoli, bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes, or until they are bright green and tender. Immediately remove the broccoli from the boiling water and place it in a bowl of ice water to stop the cooking process.
  • Use a sharp knife to chop the almonds: Chopping the almonds with a sharp knife will help to prevent them from becoming too oily. You can also use a food processor to chop the almonds, but be careful not to over-process them.
  • Grate the cheese: Grating the cheese will help it to melt evenly throughout the casserole. You can use any type of cheese that you like, but cheddar cheese, Parmesan cheese, and mozzarella cheese are all good choices.
  • Season the casserole to taste: Season the casserole with salt, pepper, and garlic powder to taste. You can also add other seasonings, such as dried oregano, basil, or thyme.
  • Bake the casserole until golden brown: Bake the casserole in a preheated oven until it is golden brown and bubbly. The cooking time will vary depending on the size of the casserole dish.

Conclusion:

Broccoli almond casserole is a delicious and easy-to-make dish that is perfect for a weeknight dinner. It is also a great way to use up leftover broccoli. The casserole can be served with a variety of sides, such as rice, pasta, or roasted vegetables. It is also a great dish to take to potlucks or parties.
