Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Time 25m

Number Of Ingredients 5

3 tablespoons unsalted butter
2 pounds broccoli, stalks removed, heads cut into small florets
4 garlic cloves, thinly sliced
1 1/2 pounds frozen cheese tortellini
3 plum tomatoes, seeded and diced

Steps:

  • Bring a large pot of salted water to a boil. Heat 1 tablespoon butter in a large skillet over medium. Add broccoli and garlic; season with salt and pepper. Cook, tossing occasionally, until broccoli is crisp-tender, 6 to 8 minutes (if skillet gets too dry, add a little water).
  • Cook tortellini in boiling water until al dente. Drain, reserving 1/2 cup pasta water; return tortellini to pot. Add broccoli mixture, tomatoes, and remaining 2 tablespoons butter; season with salt and pepper, and toss gently to combine. ORECCHIETTE WITH BROCCOLI RABE AND TOMATOES

Orecchiette with Broccoli Rabe and Tomatoes image

For this pasta dish, broccoli rabe and orecchiette are cooked together in one pan. You could stop there and simply finish with a drizzle of extra-virgin oiive oil and some finely grated Pecorino Romano, but it's exceptionally good tossed with an all-star Italian sauce of anchovies, garlic, capers, and tomatoes, and topped with toasted breadcrumbs. This recipe appears in our cookbook, "Martha Stewart's Vegetables" (Clarkson Potter).

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Time 25m

Number Of Ingredients 10

7 tablespoons extra-virgin olive oil, plus more for drizzling
1 1/2 cups plain fresh breadcrumbs
Kosher salt
4 anchovy fillets, rinsed and patted dry
6 cloves garlic, thinly sliced
2 tablespoons capers, preferably salt-packed, rinsed, drained, and chopped
1 pound cherry tomatoes, halved
1/4 teaspoon red-pepper flakes
1 pound fresh Step-by-Step Orecchiette or best-quality dried orecchiette
1 pound broccoli rabe, trimmed and cut into 2-inch pieces

Steps:

  • In a large saute pan, heat 3 tablespoons oil over medium. Add breadcrumbs and season with salt. Cook, stirring frequently, until crisp and golden, about 5 minutes. Transfer breadcrumbs to a plate.
  • Add 2 tablespoons oil to pan; heat over medium. Add anchovies and stir until they dissolve into oil, about 1 minute. Add garlic and capers; cook, stirring, until garlic is golden, 2 to 3 minutes. Add tomatoes, red-pepper flakes, and remaining 2 tablespoons oil. Increase heat to medium-high; cook, stirring occasionally, until tomatoes begin to break down, about 5 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. If using fresh orecchiette, add broccoli rabe and pasta to pot, and cook until pasta is al dente, 2 to 3 minutes. If using dried orecchiette, cook according to package instructions until al dente, adding broccoli rabe 2 minutes before end of cooking time. Drain pasta and broccoli rabe, reserving 1/4 cup pasta water.
  • Add pasta, broccoli rabe, and reserved pasta water to tomato mixture in pan. Cook over medium-high, stirring gently, until liquid has thickened slightly, about 2 minutes. Transfer to a serving dish, top with breadcrumbs, and serve immediately.

ZITI WITH SAUSAGE, SWEET CORN, BROCCOLI AND TOMATOES

Ziti With Sausage, Sweet Corn, Broccoli and Tomatoes image

When your body craves vegetables, but your mind craves pasta and meat, this 30-minute pasta dish is a happy compromise. It's loaded with fresh cherry tomatoes, corn and broccoli, and the Italian sausage (hot or sweet) adds flavor and heft. Whatever you do, don't feel wed to the recipe. Use cauliflower in the place of broccoli, chicken sausage instead of pork, chopped plum tomatoes instead of cherry. It's the kind of recipe that can be a little different (in a good way) every time you make it depending on what's in your vegetable drawer or C.S.A. box. Also, don't forget taste and season well with salt and pepper as you go. The vegetables need a little seasoning to stand up to the assertive flavors of the sausage and garlic.

Provided by Jacques Pepin

Categories     dinner, pastas, main course

Time 30m

Yield 6 servings

Number Of Ingredients 11

Kosher salt
8 ounces Italian-style sausage, hot, mild or both
1/4 cup extra virgin olive oil
1 1/4 pounds short, tubular pasta (ziti, penne or rigatoni)
3 stalks broccoli (1 1/2 pounds total)
1 tablespoon chopped garlic
3 ears sweet corn, kernels removed (about 3 cups)
1 1/4 pounds cherry tomatoes (cut in half if large)
Freshly ground black pepper
Grated Parmesan cheese (optional)
Red pepper flakes (optional)

Steps:

  • Bring a large pot of salted water to a boil. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage; cook, breaking up the meat into 1/2-inch pieces, until most of the fat has rendered from the sausage and the pieces are brown and crunchy, but not burnt, about 8 to 10 minutes.
  • In the boiling water, add pasta and cook until al dente. Reserve 1 cup of the pasta cooking water and drain.
  • While the pasta is cooking, separate the broccoli flowerets from the stalks and cut the flowerets into 1-inch pieces. Peel the fibrous skin from the exterior of the broccoli stalks and cut the stalks into 1-inch pieces. Add the broccoli to the sausage and mix well. Then stir in the garlic, reduce the heat to low, cover and cook over medium heat for about 5 minutes.
  • Add the reserved pasta cooking water to the sausage and broccoli mixture with the corn, tomatoes and the remaining three tablespoons of oil. Season generously with salt, pepper and red pepper flakes (if desired), to taste. Cover, bring to a boil and cook for 1 minute.
  • In a large serving bowl or in the pasta pot, combine the drained pasta with the sausage and vegetables, tossing the mixture together well. Serve with grated Parmesan cheese, if desired.

CRAB LINGUINE WITH BROCCOLI AND TOMATOES

Crab Linguine with Broccoli and Tomatoes image

This is a recipe I made up one night with the ingredients I had on hand. It's very quick to make and it has a great deal of flavor from the "crispy" garlic. Try alternate/additional veggies -- mushrooms, red bell pepper, zucchini, spinach, artichokes, peapods, etc. Or substitute shrimp or scallops for the crab. Most dry or fresh pastas would work in this recipe.

PERCIATELLI WITH BROCCOLI, TOMATOES AND ANCHOVIES

Perciatelli With Broccoli, Tomatoes and Anchovies image

This Southern Italian pasta is inspired by a dish that calls for the light green cauliflower used in Sicily. I love the mix of broccoli, anchovies and olives set off by the sweetness of the currants, but since my son doesn't like currants or raisins, I've made them optional.

Provided by Martha Rose Shulman

Categories     dinner, easy, lunch, pastas, main course

Time 1h

Yield Serves 4

Number Of Ingredients 12

1/4 cup golden raisins or currants (optional)
1 pound baby broccoli
Salt to taste
2 tablespoons extra virgin olive oil
2 garlic cloves, minced
2 anchovy fillets, rinsed and chopped
2 teaspoons fresh thyme leaves
1 pound tomatoes, grated, or 1 14-ounce can chopped tomatoes, with juice
8 imported black olives, pitted and chopped
Freshly ground pepper to taste
3/4 pound perciatelli (also sold as bucatini) or spaghetti
2 to 4 tablespoons grated pecorino or Parmesan cheese

Steps:

  • Place the raisins in a small bowl and cover with warm water. Let sit for 20 minutes while you prepare the other ingredients.
  • Bring a large pot of water to a boil, salt generously and add the baby broccoli. Blanch for 4 minutes and, using a skimmer or tongs, transfer to a bowl of cold water. Drain and shake out excess water. If the stems are thick and hard, peel. Chop coarsely.
  • Heat the olive oil over medium heat in a large, heavy skillet and add the garlic. Cook, stirring, until it smells fragrant, about 30 seconds to a minute, and add the anchovies, thyme and tomatoes. Turn the heat down to medium-low and cook, stirring often, until the tomatoes have cooked down and smell fragrant, about 10 minutes. Stir in the olives. Drain the raisins or currants and add, along with the broccoli and about 1/4 cup of the cooking water from the broccoli. Season to taste with salt and pepper. Cover, turn the heat to low and simmer 5 to 10 minutes, stirring occasionally, until the broccoli is very tender and the sauce is fragrant. Keep warm while you cook the pasta.
  • Bring the water back to a boil and cook the pasta al dente, following the timing instructions on the package. Check the sauce and if it seems dry add another 1/4 to 1/2 cup of the pasta cooking water. Drain the pasta and transfer to the pan with the sauce. Toss together and serve, sprinkled with pecorino or Parmesan. If desired, drizzle a little olive oil over each serving.

Steps:

  • In a large saucepan bring water to a boil, covered, over high heat. Add 1 teaspoon salt and penne. Cook 5 minutes, or until pasta is very al dente. Add broccoli. Cook 4 minutes more, or until broccoli is just tender and pasta cooked. Drain. Meanwhile, heat 2 tablespoons of the oil over medium-high heat until hot. Add garlic and cook, stirring, until pale golden. Add turkey, remaining salt and red pepper. Cook until turkey is no longer pink. Stir in sun-dried tomatoes. Cook 2 minutes more. Add pasta and broccoli to skillet. Drizzle with remaining tablespoon of oil and sprinkle with 1/3 cup of the cheese. Gently toss to combine. Serve pasta with remaining cheese. Tip: Make it even healthier -- choose a whole-grain pasta. Tips:

  • Choose fresh and ripe vegetables: The quality of your broccoli and tomatoes will greatly impact the taste of your dish. Look for broccoli florets that are deep green and tightly closed. Avoid any that are yellowing or wilting. For tomatoes, choose ones that are plump and red, with no bruises or blemishes.
  • Cook the broccoli properly: Broccoli should be cooked until it is tender-crisp. Overcooking will make it mushy and bland. You can steam, boil, or roast broccoli, depending on your preference.
  • Don't overcrowd the pan: When cooking the broccoli and tomatoes, make sure not to overcrowd the pan. This will prevent them from cooking evenly and will make them more likely to steam rather than sauté.
  • Add flavor with seasonings: Garlic, onion, salt, and pepper are all classic seasonings that pair well with broccoli and tomatoes. You can also add other herbs and spices, such as basil, oregano, or thyme, to taste.
  • Serve immediately: This dish is best served immediately after cooking. The broccoli and tomatoes will lose their鮮度 as they sit, so it's best to enjoy them fresh.

Conclusion:

Broccoli and tomatoes are a delicious and versatile combination that can be used in a variety of dishes. Whether you're looking for a quick and easy side dish or a flavorful main course, these recipes have you covered. With just a few simple ingredients and a little bit of time, you can create a delicious and healthy meal that the whole family will enjoy.
