4 cups bite-size cauliflower florets ((slightly less than 1 large crown))
¾ cup diced red onion
½ cup dried cranberries
½ cup chopped pecans, toasted
½ cup chopped, cooked bacon
¾ cup mayonnaise
¼ cup sour cream
2 tablespoons sugar
1 ½ tablespoons vinegar
Salt and pepper, to taste

Steps:

  • Combine the broccoli, cauliflower, onion, cranberries, pecans and bacon in a large bowl.
  • In a separate bowl, whisk together mayonnaise, sour cream, sugar, vinegar, salt and pepper.

2 cups hard-cooked eggs, diced
1 cup shredded Cheddar cheese
6 slices bacon
1 cup mayonnaise
½ cup white sugar
2 tablespoons white wine vinegar

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.

2 1/2 cups bite-sized cauliflower florets
2 eggs, lightly beaten
1 cup grated Parmesan
1/2 to 1 cup olive oil
1/2 teaspoon kosher salt
4 cups lightly packed fresh spinach leaves
1/2 lemon, zested
1 lemon, juiced
1/4 cup extra-virgin olive oil
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the broccoli and cauliflower in a large bowl. Toss with the beaten eggs to coat evenly. Place the Parmesan in a large tray or baking dish and dredge the vegetables in the cheese, pressing to coat evenly.
