Yield Makes 6 servings

Number Of Ingredients 10

1/2 cup unsalted butter
1 medium onion, chopped
2 garlic cloves, minced
One 10-ounce package frozen chopped broccoli, thawed but not drained (or see headnote)
Two 8 1/2-ounce boxes cornbread mix
1/2 cup whole milk
One 8-ounce container cottage cheese
4 large eggs
1 tablespoon salt
1 cup plus 2 tablespoons grated sharp cheddar cheese, for topping

Steps:

  • Preheat the oven to 375°F.
  • Heat the butter in a 10-inch cast-iron skillet over medium high heat. Add the onion, and sauté until softened, 4 to 5 minutes. Add the garlic and broccoli to the skillet, and sauté for 2 minutes, until the garlic is fragrant and the broccoli has warmed through. In a medium bowl, stir together the cornbread mix, milk, cottage cheese, eggs, salt, and 1 cup of the cheddar cheese until smooth, then pour the batter into the skillet over the vegetables and stir to blend. Sprinkle the top of the batter with the remaining cheese. Bake the cornbread in the skillet for about 30 minutes, until it is lightly golden and a toothpick inserted in the center comes out clean. Cool for 5 to 10 minutes, then serve.

Provided by Hapemom

Number Of Ingredients 9

1 (10 ounce) pkg frozen chopped broccoli (thawed)
1 package Jiffy cornbread mix
3 eggs, beaten
1 medium onion, chopped
1 cup cheddar cheese, shredded
1 stick butter, melted
1/2 teaspoon salt
1 or 2 garlic cloves, crushed
1/4 teaspoon ground red pepper

Steps:

  • Press thawed broccoli between paper towels to remove excess moisture. Combine cornbread mix, eggs, chopped onion, cheese, butter and seasonings. Stir well. Stir in broccoli (batter will be thick). Pour mixture into a greased 8" square pan. Bake at 375 degrees for 25-30 minutes, or until golden brown. Cool slightly, cut into squares.

Tips:

  • Choose the right cornbread mix. Not all cornbread mixes are created equal. Some are sweeter than others, and some have a more coarse texture. For this recipe, you'll want to use a mix that is relatively savory and has a fine texture.
  • Don't overmix the batter. Overmixing the batter will make the cornbread tough. Mix just until the ingredients are combined.
  • Use fresh or frozen corn. Fresh corn is always best, but frozen corn will work in a pinch. If using frozen corn, thaw it before adding it to the batter.
  • Add mix-ins. This recipe is a great base for adding mix-ins. Some popular options include diced bell peppers, chopped onion, shredded chicken, or crumbled bacon.
  • Bake the cornbread in a hot oven. This will help to create a crispy crust and a fluffy interior.
  • Let the cornbread cool slightly before serving. This will allow the flavors to meld and the cornbread to set.

Conclusion:

Broccoli cheddar cornbread is a delicious and versatile dish that can be served as a side dish, appetizer, or even a main course. It's easy to make and can be customized to your liking. So next time you're looking for a quick and easy recipe, give this broccoli cheddar cornbread a try!
