4 cups fresh broccoli florets
1 large onion, finely chopped
1 cup cubed fully cooked ham
1 medium sweet red pepper, chopped

1/3 cup all-purpose flour
4 cups fat-free milk
2-1/2 cups shredded reduced-fat cheddar cheese
1/4 cup minced fresh parsley
2 teaspoons Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/4 teaspoon pepper
TOPPING:
1/4 cup dry bread crumbs
1 tablespoon butter, melted

Steps:

  • Cook macaroni according to package directions. Meanwhile, place 1 in. of water in a large saucepan; add broccoli. Bring to a boil. Reduce heat; cover and simmer for 4-5 minutes or until crisp-tender., In another saucepan, saute the onion, ham and red pepper in 1 tablespoon butter until vegetables are crisp-tender. Sprinkle with flour; stir until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened., Stir in the cheese, parsley, mustard and seasonings until blended. Drain broccoli and macaroni; stir into cheese sauce. Transfer to a greased 2-qt. baking dish (dish will be full)., Combine bread crumbs and butter. Sprinkle over top. Bake, uncovered, at 350° for 25-30 minutes or until heated through.

1 pound cavatappi (hollow corkscrew shaped pasta) or other short cut pasta
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup chicken stock
1 1/2 cups whole milk
Freshly ground black pepper
A few grates nutmeg
1 cup shredded Gruyere
1 cup shredded white sharp Cheddar
2 tablespoons Dijon mustard
1/4 pound French ham, deli sliced, finely chopped

Steps:

  • Heat a large pot of salted water to a boil, drop in pasta. Cook pasta to just shy of al dente.
  • Heat sauce pot with butter over medium heat, whisk in flour and cook for 1 minute, whisk in stock then milk, allow the sauce to thicken, and season with salt, pepper and nutmeg. 2 cups uncooked pasta, I used rotini
10 ounces of chopped broccoli, thawed
2 tablespoons stick margarine
1/4 cup chopped sweet onion
3 tablespoons all-purpose flour
1 1/2-2 cups milk
3/4 teaspoon dry mustard (to taste)
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon pepper
12 ounces of diced cooked ham
2 cups shredded sharp cheddar cheese, divided

Steps:

  • Cook pasta according to directions on pasta box.
  • Drain, but do not rinse.
  • In same pan that you cooked the pasta in, add margarine and onion.
  • Cook until onion is slightly softened, add flour and stir until well combined.
