1 tablespoon vegetable oil
1 onion, sliced
4 eggs
1 cup mayonnaise
3 tablespoons all-purpose flour
salt and pepper to taste
2 (16 ounce) bags frozen chopped broccoli, thawed

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease an 8x8-inch baking dish.
  • Heat the vegetable oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more. Set aside.
  • Beat eggs with mayonnaise, flour, salt, and pepper in a large bowl. Stir in broccoli and onion. Pour into the prepared baking dish.

2 cups water
1 package potato pancake mix
4 eggs (or 1 cup Egg Beaters)
1 cup chopped broccoli
1/4 cup oil

Steps:

  • Combine water and potato pancake mix and let stand for 10 minutes. Add eggs, broccoli and oil. Put into an 8 X 8 inch greased pan. Bake at 350 for 1 hour. This recipe can be doubled for a 9 X 13 inch pan.

Alot of broccoli goes into this dish as this is the main ingredient. 1/2 cup matzo meal

3 large potatoes
1 head broccoli, broken into florets
1 cup milk
3 eggs
2 -3 broken matzos or 1 cup farfel

5 large eggs
3/4 cup mayonnaise
1 finely chopped onion
1 tablespoon garlic powder
1 teaspoon salt

1/4 cup whole wheat flour

1/2 tablespoon chicken soup powder

  • Preheat oven to 350 degrees Fahrenheit.
  • Cook broccoli in a pot of boiling water until soft enough to mash with a fork.

In large mixing bowl mash potatoes and stir in eggs, one by one, incorporating well. Add mayonnaise, matzo meal, salt and pepper, stirring well. Fold in onion and broccoli. Grease a 9-by-13-inch baking pan and spoon in mixture, spreading evenly. Sprinkle with panko or challah crumbs. Bake for 50 minutes or until golden brown.
