1 lb broccoli florets
½ teaspoon red pepper flakes
1 teaspoon kosher salt

1 lb rigatoni
4 cups chicken stock
½ cup grated parmesan cheese, plus more garnish

Steps:

  • Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the sausage and cook until browned, breaking up with a wooden spoon, about 8 minutes.

I love the taste of the broccoli, the pasta and the hot turkey italian sausage. This is a quick easy, low-fat dish that is very satisfying! Even my kids enjoy this one...I hope you do too! Please adjust the garlic and crushed red peppers to your taste. My family likes lots of both! NOTE: IF YOU ARE NOT A FAN OF HOT TURKEY ITALIAN SAUSAGE - USE REAL HOT ITALIAN SAUSAGE. The true recipe calls for real italian sausage but I find this recipe is just as delicious with a great quality hot turkey italian sausage.

1 lb bow tie pasta
1 head broccoli, cut into bite sized pieces
6 garlic cloves, minced
2 tablespoons olive oil

1 pound rigatoni
1 large bunch broccolini, trimmed into 1 1/2-inch pieces
3 tablespoons olive oil
1 pound sweet Italian sausage, casings removed.
1 large onion, thinly sliced
2 tablespoons tomato paste
1/4 teaspoon red pepper flakes
4 cloves garlic, thinly sliced
1/2 cup fresh parsley, chopped
1/2 cup grated Pecorino Romano cheese, plus more for topping

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions for al dente, adding the broccolini for the last 4 minutes of cooking. Reserve 2 1/2 cups of the cooking water, then drain the pasta and broccolini and set aside.
  • Meanwhile, heat a large Dutch oven over medium heat and add the olive oil. When the oil is hot, add the sausage and cook, breaking it up with a wooden spoon, until browned, about 4 minutes. Add the onion and cook, stirring occasionally, until softened, about 5 minutes.

3-4 tbsp sunflower oil or olive oil
1 onion, finely chopped
4 pork sausages
1 heaped tsp fennel seeds (optional)
4 garlic cloves, finely chopped
400g short pasta of your choice, such as orecchiette or penne
1 medium broccoli, chopped into small florets
1 lemon, juiced
pinch of chilli flakes, or to taste (optional)
50g freshly grated pecorino or hard cheese

Steps:

  • Heat 2 tbsp sunflower oil in a pan over a medium heat and fry the onion for 8-10 mins until soft and translucent.
  • Squeeze the sausagemeat from the casings and crumble into the pan with the onion. Drizzle in 1 tbsp sunflower oil, turn up the heat to medium-high and fry until the sausagemeat has started to colour and turn slightly crisp in parts, about 5-6 mins. Lightly crush the fennel seeds using a pestle and mortar. Add the garlic and crushed fennel seeds to the sausagemeat and cook for 1 min more until fragrant, then remove from the heat and set aside.
  • Bring a large pan of salted water to the boil and cook the pasta following pack instructions, or until al dente. Halfway through the cooking time, add the broccoli. When the pasta is ready and broccoli tender, drain in a colander, reserving a mugful of the cooking water.
  • Stir the cooked broccoli and pasta into the sausage mixture in the pan until coated. Season well. Stir through the lemon juice, chilli flakes and a splash of the reserved cooking water to loosen if needed (or use 1 tbsp oil, if you like). Serve in bowls topped with the cheese.
