Provided by Ina Garten

Categories     side-dish

Time 35m

Yield 6 servings

Number Of Ingredients 10

4 to 5 pounds broccoli
4 garlic cloves, peeled and thinly sliced
Good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
3 tablespoons pine nuts, toasted
1/3 cup freshly grated Parmesan cheese
2 tablespoons julienned fresh basil leaves (about 12 leaves)

Steps:

  • Preheat the oven to 425 degrees F.
  • Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets. Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper. Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.
  • Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oil, the lemon zest, lemon juice, pine nuts, Parmesan, and basil. Serve hot.

Tips:

  • Choose the right broccoli: Look for broccoli crowns that are deep green in color and have tightly closed florets. Avoid crowns that are yellowing or have loose florets.
  • Prepare the broccoli properly: Wash the broccoli thoroughly and cut it into 1-inch florets. If you are using frozen broccoli, thaw it completely before cooking.
  • Cook the broccoli to perfection: Broccoli can be cooked in a variety of ways, including boiling, steaming, roasting, and sautéing. The best way to cook broccoli is to cook it until it is tender but still has a slight crunch. Overcooked broccoli will be mushy and lose its nutritional value.
  • Make a flavorful sauce: The sauce is what really makes broccoli parmesan special. There are many different variations of the sauce, but the most common ingredients include butter, garlic, flour, milk, and parmesan cheese. You can also add other ingredients to the sauce, such as herbs, spices, or vegetables.
  • Use high-quality parmesan cheese: The quality of the parmesan cheese you use will make a big difference in the flavor of the dish. Look for parmesan cheese that is made with 100% cow's milk and that has been aged for at least 12 months.

Conclusion:

Broccoli parmesan is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to get your daily dose of fruits and vegetables, and it is also a good source of protein and calcium. Whether you are serving it as a main course or a side dish, broccoli parmesan is sure to be a hit.
