- To make the lemon cashew-cream sauce, place the cashews in a medium heatproof bowl and cover with the boiling water. Allow to stand for 30 minutes. Drain the cashews well and place them in a blender. Add the stock, lemon juice, salt and pepper and blend until very smooth.
- Cook the pasta in a large saucepan of salted boiling water for 6 minutes. Add the broccoli and cook for a further 4 minutes or until the pasta is al dente and the broccoli is just tender. Drain the pasta and broccoli and immediately return to the warm saucepan. Add the cashew-cream sauce and toss to combine.

Steps:
- Cut the broccoli buds into small florets, leaving as short a stem as possible; set aside; cut the remaining broccoli stems into 1/2" pieces; boil them, covered, in the 1 1/4 cups water, lightly salted, for 15 minutes or until very soft.
- Meanwhile, boil the pasta in salted water until al dente; drain, reserving 1/2 cup of the cooking water; return the pasta to the pot and stir until all moisture is evaporated.
- Place the reserved florets into a small pot and steam or boil 5 minutes, retaining the bright green color and a bit of crunch.

- Start water boiling in 2 pots for pasta and broccoli
- Add 2 tsp. of butter & 1 tsp. garlic to hot skillet. Add sliced mushrooms. Sautee and set to side.
- Add 2 tsp butter to hot skillet. Whisk in 2 Tbls of flour to make a roux. Gradually stir in 2 cups of milk. Heat to a boil stirring frequently. Reduce heat to thicken and add parmesan cheese and stir to thicken. Season with 2 tsp of garlic and add salt & pepper to taste.

- Add pasta to boiling water for 7-9 mins
- Once done, drain pasta and broccoli and add to sauce in pan

- Bring a medium pot of lightly salted water to a boil.
- Add pasta and cook for about 5-8 minutes.
- Stir in broccoli and cook 5-8 minutes more, or until pasta is al dente.

- Turn on a food processor fitted with the steel blade, and drop in the garlic. When it is chopped and adhering to the sides of the bowl, turn off and scrape down the bowl. Add the walnuts and bread crumbs, and process to a paste. Add the ricotta, 2 tablespoons warm water and Parmesan. Pulse until well blended. Add the olive and walnut oils, and process until smooth and homogenous. Taste and add salt as desired. Transfer to a wide pasta bowl.
- Bring a large pot of water to a boil. Fill a bowl with ice water. When the water comes to a boil, salt generously and add the broccoli raab or broccoli. Boil four to five minutes, until tender but still bright. Transfer to the ice water. Drain and chop broccoli raab medium-fine (regular broccoli need not be chopped). Set aside.
- Bring the water back to a boil and cook the pasta al dente, following the timing instructions on the package but checking a minute or two before the indicated cooking time. Before draining the pasta, add 1/2 cup of the pasta cooking water to the ricotta mixture and stir until well blended. The sauce should have a creamy consistency (add more of the pasta water if necessary). Just before draining the pasta, add the broccoli raab or broccoli back into the pot with the pasta to heat, then drain. Toss at once with the sauce, and serve, passing Parmesan or Pecorino on the side.
